PORK STEAKS WITH CHERRY BARBECUE SAUCE

- For the rub: In a mixing bowl, whisk together the pepper, salt, sugar, smoked paprika, garlic powder, onion powder and chile flakes. Liberally sprinkle the pork steaks on both sides and allow to marinate, refrigerated, for 3 hours or up to overnight.
- Set up your grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
- Make the cherry barbecue sauce: Place a saucepan over the direct-heat side of the grill. Add a drizzle of olive oil along with the jalapeño and onion. Season with the coriander, cumin and salt and sweat until softened, 2 to 3 minutes. Add the cherries, cherry soda, molasses and Worcestershire sauce. Bring to a simmer and cook until the cherries have softened, about 10 minutes. Transfer to a blender and purée until smooth. Add the balsamic and lemon juice and purée again. Transfer back to the saucepan and place on the indirect-heat side of the grill. Cook until the sauce thickens and reduces, about 20 minutes. Remove from the grill and set aside.
- Place the pork steaks on the indirect-heat side of the grill, close the lid and cook, keeping the temperature of the grill between 250 and 275 degrees F and basting with the cherry barbecue sauce once they have cooked for 2 hours, until the pork steaks are tender and an internal temperature reaches 195 degrees F, 3 to 4 hours total. Remove from the grill and allow the pork to rest for 10 minutes before serving. Serve with any remaining cherry barbecue sauce on the side.

- Place meat in a large resealable plastic bag. In a medium bowl, mix together honey, Dijon mustard, chili powder, and salt. Pour marinade over tenderloins, seal, and refrigerate for at least 4 hours.

GRILLED SWEET AND TANGY PORK CHOPS

- Preheat the grill to medium-high heat.
- Season the pork chops lightly on both sides with the Seasoning Salt. Remember, we aren't rubbing the chops.
- Grill the chops for 5 to 7 minutes per side. Brush them with the Sweet and Tangy Glaze the last 5 minutes of grilling. Internal temperature should register 145 degrees F on an instant-read thermometer. Remove the chops from the grill to a serving platter and allow them to rest for 5 minutes before serving.
- Mix the salt, onion powder, black pepper, garlic powder, celery seed, cayenne, and smoked paprika in a small bowl. Reserve a small amount for another use.
- You can store the remaining Seasoning Salt in an airtight container for up to 6 months.
- In a small bowl, mix together the apple cider vinegar, maple syrup, ketchup, mustard, Worcestershire, and hot sauce. Season with salt and pepper, to taste, and refrigerate if not using immediately.
SWEET & TANGY BBQ PORK STEAKS
I was thinking about Lambert's Restaurants "Home of the Throwed Rolls" and how much I like their barbeque pork steak. So instead of driving the 6 hours to the nearest Lambert's to Chicago, I decided to give it a try myself. It turned out so well that I thought I should share the recipe. And it's very easy. I've been snooping around in the shadows on this site for a long time but you've finally inspired me to share as well. Hope you enjoy this as much as my family did. The rib rub and sauce listed are completely customizable...feel free to use whatever you have on hand and it'll still be great. This just happens to taste like Lambert's. =)

- Lay out steaks and generously sprinkle with rib rub. Give the meat a quick rub. Make sure you do both sides!
- Stack the steaks up and wrap tightly with plastic wrap. Refrigerate for at least 2 hours. Anything longer than 8 hours and you're just prolonging your own hunger ;).
- Heat a (gas) grill to medium-high or equivalent. Grill steaks over direct heat for about 3 minutes on each side. These are kind of hard to overcook due to the fat content so don't be too scared of drying them out.
- Pour BBQ sauce in a shallow dish and dredge steaks in the sauce.
- Return steaks to grill over lower, indirect heat for 3-5 minutes per side or until they are carmelized to your taste.
- Remove from grill and let rest a few minutes and serve.
- If you've got any rolls, feel free to toss them across the room! Enjoy!

- Clean the pork steaks and pat-dry with paper towels. If they are thick steaks, place them in between two sheets of cling wrap on a cutting board and use a meat mallet to gently and evenly pound them into ½-inch thick pieces. Transfer to a plate and season both sides with the kosher salt. Set aside while you prepare the marinade.
- Finely chop the lemongrass and Bird’s Eye red chilies, and roughly chop the garlic. Pound into a smooth paste using a mortar and pestle (or use a mini blender). Stir in the fish sauce, vinegar, ground white pepper, white sugar, ground cayenne, and lime juice until combined well. Place the pork steaks in a medium-sized mixing bowl then spoon the marinade on top. Mix to coat, then cover the bowl with cling wrap (or a plate) and allow to marinate at room temperature for 30 minutes. (Note: If you have time and have planned in advance, you can place the bowl in the fridge to marinate for 3-4 hours, or overnight for more flavor. Remove from the fridge 40-60 minutes before you plan to cook to take the chill off.)
- Whisk together the lime juice, fish sauce, vinegar, white sugar, and hot water in a small bowl. Finely chop the red chili and garlic, then stir both into the sauce. Cover and set aside until ready to serve.
- Heat a cast-iron or nonstick grill pan over medium-high heat and brush with the canola oil. Once hot, scrape most of the marinade off the pork steaks and place them on the pan (reserve the marinade). Cook for about 3 minutes, turning the pork steaks every 30-45 seconds, until slightly charred. Then turn the heat down to medium-low and lightly brush the pork with some of the reserved marinade. Continue cooking for 4-5 minutes, turning frequently. Use tongs to hold the steaks up and sear the fatty edge parts for 30-45 seconds. Once the pork has reached your desired doneness and has cooked through, switch off the heat.
