HONEY MUSTARD CHICKEN THIGHS
These honey mustard chicken thighs are quick, easy, and taste a little bit sweet!

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine Dijon mustard, grainy mustard, honey, soy sauce, tarragon, and ginger in a large bowl. Rinse chicken thighs under cold water and pat dry with paper towels. Add chicken thighs to the bowl and toss to coat. Transfer to a baking pan and spoon sauce over the thighs.
- Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Spoon sauce over chicken thighs and serve.

MARINADE FOR STEAK (PORTERHOUSE, SIRLOIN OR ANY BEEF CUTS)
This is a simple marinade for any beef cuts, the longer you marinate the more the flavour will soak into the meat. My carnivores (Little Miss (DD) and Hubby) really enjoyed it. I didn't mind it on chicken either.

- In a large shallow bowl combine the sugar, ginger, garlic, tarragon, soy sauce and vinegar, mix until sugar has dissolved.
- Add meat into the marinade mixture, mix.
- Cover with cling wrap and allow to marinate at least 30 minutes, turning once or twice.
- Place steak on BBQ or grill, cook then brushing with marinade, flip steak once, cook until done or according to your taste.
- Remove off heat and serve immediately with salad and potato dish.

- Place the Dijon mustard, sugar, vinegar, garlic clove, and salt into a blender. Cover, and puree until the garlic has blended smooth. Sprinkle in the xanthan gum, and blend about 15 seconds to mix well. With the blender running, pour in the vegetable oil alternately with the water; blend until thick and creamy. Add the celery seed, red pepper flakes, black pepper, tarragon, and mustard seed; pulse until the spices are evenly distributed.

SALMON WITH TARRAGON SAUCE
This is simple, elegant but ,best of all, it is low calorie!! Great for when you want something on the sophisticated side but don't need the guilt.

- Preheat oven to 400 degrees.
- Melt 2 T. of the butter in a roasting pan large enough to hold the fish.
- Put the fish in the butter and turn to coat. Sprinkle with salt.
- Bake 20 minutes, turning once.
- Meanwhile, in small saucepan, combine wine, tarragon, and mustard and bring to a boil over medium heat. Simmer for 2 minutes.
- Remove from heat and swirl in the 2 T. remaining butter until melted.
- Divide fish into 4 servings and top with the sauce.

SOY MARINADE

- In a small bowl, combine all the ingredients and mix well. Transfer to a tightly sealed jar and store in the refrigerator for up to 3 weeks.
MARINATED PAN- ROASTED DUCK BREASTS
I prepare this on special occasions such as a romantic New Year's Eve dinner or my husband's birthday. Though I prefer tarragon, you could use basil leaves or rosemary instead. I keep it simple, serving with oven roasted herbed-potatoes (over which the sauce is excellent) and fresh asparagus.

- For marinade: Combine wine, soy sauce, garlic, tarragon and pepper in a shallow bowl large enough to contain both breasts side by side.
- Marinate the breasts overnight.
- Just before cooking, strain marinade liquid into saucepan.
- Heat a large saute pan without any oil.
- Score the fatty side of each breast several times.
- Pan-roast breasts, FAT-side down for about 2 minutes.
- Turn to flesh side, and cook another 10 minutes.
- Remove from saute pan to cutting board.
- At the same time as you are cooking the breasts, bring marinade to boil, adding butter and sherry.
- Boil vigorously 5 minutes or until slightly reduced and beginning to thicken.
- Slice breast thinly on the bias, away from the fat.
- Return the slices BRIEFLY to the hot saute pan to brown.
- By this I mean literally lay each slice in the pan, immediately turn it over, and remove.
- This will cook the duck medium rare.
- Serve with sauce.
