DELICIOUS MEATLOAF WITH VEGETABLES
My family likes spice so I add in about 2 teaspoons dried chili flakes when sauteeing the veggies, but that is optional, you can sub chili sauce for the ketchup ---if you prefer to use fresh sliced mushrooms, just saute in the skillet before the onions and other ingredients, any leftovers makes a fantastic sandwich! :)

Steps:
- Set oven to 350 degrees.
- In a large skillet melt butter; saute the onions, green onion, garlic, chopped celery and carrots over medium heat, stirring for until the carrots are fork-tender (about 10 minutes).
- Season with seasoning salt and pepper.
- Add in Worcestershire sauce and 1/2 cup ketchup; cook stirring 2 minutes; remove from heat.
- In a large bowl combine the sauteed veggies, ground beef and pork, mushrooms, bread crumbs, eggs, milk, Parmesan cheese and parsley.
- Pat into a shallow 10 x 5-inch oval baking dish.
- Sprinkle with grated Parmesan cheese, then drizzle about 1-1/2 cups ketchup over the mixture.
- Bake for about 1 hour or until cooked.
TASTY 3 MEAT- MEATLOAF WITH MINCED VEGETABLES
A hearty, tasty meatloaf which includes turkey, ground beef, sausage, and vegetables. A friend shared her awesome meatloaf recipe, and I tweaked it to my liking (hers used ground veal in place of the ground pork sausage, added 1 teaspoon tobasco sauce in step 3, double the ground pepper, and had a prettier presentation with rosemary sprigs sprinkled on top. Try it that way too, you may love it!)

Steps:
- 1. Preheat oven to 400 degrees Fahrenheit. Remove crusts from bread, and place slices into the bowl of a food processor, grind until crumbs are fine. Transfer bread crumbs to a large mixing bowl. (Using dried bread crumbs will change the consistency of your meatloaf).
- 2. Place carrot, celery, yellow onion, and garlic into the food processor. Processes until veggies have been minced. Transfer veggies to the bowl with the bread crumbs.
- 3. Add ½ cup ketchup, 2 teaspoons dry mustard, turkey, beef, sausage, eggs, salt, pepper, and rosemary. Knead the meat mixture until thoroughly combined. The texture will be wet, but be tight enough to hold a free-form shape.
- 4. Set a wire baking rack into an 11 by 17" rimmed baking pan. Cut a piece of parchment or waxed paper to fit the center of your rack, but leave a couple inches around the edges for the drippings to drip off and into the baking pan. The paper will prevent your meatloaf from falling through the rack. Using your hands, form an elongated loaf covering the paper.
- 5. Place the remaining 3 tablespoons ketchup, 2 ½ teaspoons mustard, and brown sugar in a bowl. Mix until smooth. Brush the glaze over the loaf with a pastry brush. Place oil in a medium saucepan set over high heat. When oil is smoking, add red onion rings. Cook, stirring until onion is soft and golden in places. Add 3 tablespoons water, and cook, stirring until most of the water has evaporated. Transfer onion to a bowl to cool slightly, and then sprinkle onion over the meatloaf.
- 6. Bake 55 minutes or until an instant-read thermometer inserted into the center reads 160 degrees. Let meat loaf cool on rack, 15 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Oil a 9x5-inch loaf pan.
- Place the onion and carrots into a saucepan, and pour in the beef broth. Bring to a boil over medium heat, and reduce heat to a simmer; cook, stirring often, until the vegetables are tender, about 8 minutes. Set the veggies and broth aside.
- In a large bowl, beat the eggs, and stir in bread crumbs, basil, salt, and black pepper. Allow the mixture to stand for 5 minutes to moisten the crumbs, and lightly mix in the turkey, beef, and pork sausage. Mix in the cooked onions, carrots, and beef broth. Place the mixture into the prepared loaf pan. In a bowl, mix the tomato soup, balsamic vinegar, and Dijon mustard together, and spread the mixture over the meat loaf.
- Bake until the loaf is no longer pink in the center and an instant-read meat thermometer reads at least 160 degrees F (70 degrees C), about 1 1/2 hours.

- MEAT:.
- In small bowl beat egg, salt 1/2 the can of hunts' tomato sauce. Then add chopped bread crumbs, mix well and set aside.
- In large bowl combine meat, chopped onions. Add bread crumb mixture and mix well. Spray one loaf pan with Pam or cooking spray of your choice and put meat mixture in pan and top with sauce. (For sauce see below).
- SAUCE:.

- Preheat oven to 350 degrees.
- In a large mixing bowl, combine meat, bread crumbs, onion, ketchup, eggs, and onion soup mix.
- Use your hands to squish all of the ingredients together until all of the ingredients are well combined.
- Form the meat mixture into two "loaves." At this point, I usually wrap one of the loaves in press and seal freezer wrap and toss it in the freezer. However, if you have a larger family, you'll probably want to cook both.
- Put the two loaves in a 13x9 baking pan and bake for 45 minutes.
- While the loaves are baking, mix up the sauce by stirring the ketchup, the brown sugar, and the mustard together until smooth. Set aside.
- After 45 minutes, take the meat loaves out and spread the sauce over the tops.
- Placed the sauced loaves back in the oven and bake for another 15 minutes or until cooked through.
- Let the meat loaves cool for 5 - 10 minutes before cutting them.
- Enjoy!
- P.S. To cook a frozen meatloaf, take the frozen meat loaf out the day before you want to cook it and let it thaw in the refrigerator. Cook as stated above.

EASY (AND TASTY) MEATLOAF
This is the meatloaf recipe my family has used my whole life. I love it! Of course, we have to double to whole recipe, using 2 to 3 pounds ground beef, the whole package of onion soup mix, and a 12 fluid ounce can of Carnation evaporated milk. This is good with baked potatoes and some Bush's baked beans. (or any other vegetables: corn, peas...) I hope you like it!

- Heat oven to 350 degrees.
- In 8 by 4 inch loaf pan, combine first 3 ingredients; mix well (mixture will be very moist) Press evenly in pan.
- Combine brown sugar, mustard, and ketchup in a small bowl. (We seem to double -- or triple the topping- It is so good!) Spoon over mixture.
- Bake for 45 minutes.

- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree.
