TED'S BEEF STEW
This hearty stew is great served over egg noodles.

Steps:
- Combine the flour, garlic powder, 1 teaspoon salt, and 1 teaspoon pepper in a resealable plastic bag. Place the beef in the bag and shake to coat.
- Heat the oil in a large stockpot over medium heat; brown the beef in the hot oil and remove to a plate lined with paper towels. Add the onion to the remaining oil and cook until browned. Pour the beef broth into the stockpot. Stir in the rosemary, thyme, and bay leaves. Season with salt and pepper. Return the beef to the pot. Bring the mixture to a boil; reduce heat to low, cover, and simmer 1 hour.
- Add the potatoes, carrots, and celery to the pot. Whisk together the cornstarch and cold water in a small bowl and mix into the stew. Cover and simmer 45 minutes more. Stir in the frozen peas and cook another 15 minutes.

I love this recipe for braised red cabbage with apples. It's simple, and can be made in to a festive winter side dish if you add cinnamon and orange.

Steps:
- Juice one orange half. Remove and discard the peel from the second half, and cube the flesh.
- Combine cabbage, apples, onion, vinegar, cinnamon, and salt in a large stock pot over low heat. Add orange juice and chopped flesh, then season with pepper. Cover and simmer, stirring occasionally, until cabbage is tender and has reduced, at least 45 minutes.

CRUNCHY BAKED APPLES
We live in South Carolina's Piedmont area, which is famous for huge apple orchards. This is one of my family's favorite apple recipes. I almost always make this to top off our traditional Sunday dinner.

- In a blender or food processor, grind walnuts and sugar. Add cinnamon and set aside. Combine the brown sugar, raisins and 2 tablespoons of butter; set aside. Core apples and peel the top two-thirds of each. rub tops and sides with lemon; squeeze juice into centers. Brush apples with 2 tablespoons butter; press nut mixture evenly over peeled sides. Place in an ungreased 9-in. square baking dish. Fill apples with raisin mixture. Place a cinnamon stick in each apple; drizzle with remaining butter. Pour apple juice around apples. Bake, uncovered, at 375° for 40-50 minutes or until apples are tender. Cool 15 minutes before serving.

- Preheat the oven to 375 degrees F (190 degrees C).
- Toss sliced apples with lemon juice to prevent browning.
- Mix flour, rolled oats, wheat and barley nugget cereal, melted butter, 1/4 cup white sugar, and 1/4 cup brown sugar together in a large bowl.
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir 1/3 cup brown sugar, 1/3 cup white sugar, and cinnamon into melted butter until sugar begins to dissolve, 3 to 4 minutes. Add apples and water; continue cooking and stirring until apples soften and are coated with sauce, 4 to 5 minutes.
- Pour apples and sugar mixture into a 2 quart baking dish. Sprinkle topping evenly over the apple filling.
- Bake in the preheated oven until the top is browned and the filling is bubbling up around the edges, 25 to 30 minutes. Cool for 10 to 15 minutes.

TED'S CRUNCHY APPLE BEEF
This is a recipe I adapted (a little) from Martin Yan's Crunchy Apple Beef recipe. It is absolutely delicious!

Steps:
- Cut the tri-tip into 1/2 inch cubes.
- Mix the cornstarch, soy sauce, and beef together and let marinate while you finish prepping.
- Zest the lemon, and squeeze about a tablespoon of the juice.
- Combine the lemon juice, zest and five spice powder.
- Core and cut the apples into 1/2 inch cubes, and mix into the five-spice-lemon mix.
- Dice the red pepper (1/2 inch again!) and cut the green onions into two inch lengths.
- Put a stir-fry pan or wok on high heat till hot and add the oil, swirling it around the sides.
- Add the beef and stir-fry until it's rare (2 minutes).
- Add apples, peppers, and onions and stir-fry till apples are tender (2 minutes).
- Put it on a platter and serve!
