CHILE-LIME TEQUILA

Steps:

  • Combine ingredients in a clean one-liter jar with a lid. Store in the refrigerator and shake daily for 2 days until infused, then strain and discard solids.

2 small jalapenos, halved lengthwise
1 strip lime zest
750 ml silver tequila

Tequila Flats Smoked Chili image

Steps:

  • Heat olive oil in large cast iron pot on high. When oil is hot, add cubed beef and cook until browned, stirring occasionally.
  • When beef is browned, remove from pot and set aside. Drain any liquid from the pot.
  • Return pot to stove and, on medium-high heat, cook the pork sausage and chopped onions until sausage is cooked and onions are translucent.
  • At this point, return the cubed beef to the pot along with all the remaining ingredients.
  • Stir well, cover and simmer on low to med.-low for 3 to 4 hours stirring occasionally, until beef brisket is tender and chili has thickened.
  • Ladle into bowls and garnish with shredded cheese blend & green onions.
  • American beer (tequila/lime) substitutes Mexican beer.
  • 3 to 4 fresh jalapeños, seeded & chopped, substitutes chipotle pepper.

Steps:

  • Place the red peppers and chilies in a blender or food processor and blend until smooth.
  • Transfer the pureed red peppers and chilies into a bowl.
  • Heat a little olive oil in a small pan and fry the garlic until slightly browned, but not burnt.
  • Remove the garlic with a slotted spoon and add it to the red peppers and chili, along with the paprika, sugar, fish sauce to taste and the lemon juice.

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over medium-high heat. Add the sausage, pork, and beef. Cook, stirring and breaking up the meat with a wooden spoon, until meat is browned and no bits of pink remain, about 5 to 6 minutes.
  • Add the onion, fennel, red chile, garlic, chili powder, cumin, fennel seed, cayenne, and tomato paste, and cook until the vegetables are softened, about 4 to 5 minutes. Stir in the sugar, crushed tomatoes and juice, smoked beer, and soaked kidney beans.
  • Bring the chili to a boil, cover the pot, reduce heat to low, and simmer until beans are tender, about 90 minutes. Just before serving, stir in the salt.
  • Serve the chili garnished with sour cream and sliced scallions, and, of course, with a glass of smoked beer.
