- Combine sour cream, green onions, sun-dried tomatoes, cilantro, and 1/2 teaspoon Tex-Mex seasoning; set aside., Squeeze hash brown potatoes dry with paper towel to remove excess liquid. In a large bowl, combine potatoes, bread crumbs, cheese, salt and remaining Tex-Mex seasoning., On an electric griddle, heat 3 tablespoons oil over medium-high heat. Drop potato mixture by 2/3 cupfuls into oil; press to flatten slightly. Fry, adding oil as needed, until crisp and golden brown, 5-7 minutes. Drain on paper towels; keep warm., On same griddle, heat remaining oil over medium heat. Break eggs, one at a time, onto griddle. Reduce heat; cook until whites are set and yolks have begun to thicken. Flip eggs if desired; cook to desired doneness., To assemble, top each potato patty with an egg, salsa, bacon and sour cream mixture. If desired, sprinkle with green onions.

- In a large nonstick skillet, cook tortilla strips in 2 teaspoons oil for 5 minutes or until lightly golden brown but not crisp. Add the onion, jalapeno and remaining oil; cook 2 minutes longer. , Add the eggs, tomato, beef, salt and pepper; cook and stir until eggs are completely set. Sprinkle with cheese; cover and let stand for 2-3 minutes until cheese is melted.

- Ingredients.
- 2 tablespoons Canola Oil, divided.
- 1/4 cup onion, chopped.
- 1/4 green bell pepper, chopped.
- 1 cup baby spinach.
- 1/4 cup chorizo, cubed.
- 4 eggs.
- 1/8 cup 1% milk.
- 1/4 teaspoon garlic powder.
- 1/4 teaspoon paprika.
- black pepper.
- Heat 1 tablespoon of oil in a large pan.
- Add onion. Saute until translucent.
- Add green pepper. Saute for 2 minutes.
- Add chorizo and baby spinach. Saute for 2 minutes.
- Whisk together eggs and milk in a bowl.
- Add last tablespoon of oil to hot pan. Allow to heat. Pour in egg mixture.
- Add spices.
- Cook until eggs are desired firmness.

- Brown sausage in a large skillet over medium heat, stirring occasionally; drain off fat, and crumble.
- Add all other ingredients except tortillas, chili, and cheese; simmer 20 minutes or until onions and green pepper are tender.
- Heat chili in a small saucepan over medium heat; keep warm.
- Warm tortillas in microwave briefly, between paper toweling (times may vary: 10-20 seconds each, on high).
- Place tortilla on plate, put 1 cup sausage mixture on tortilla and fold up.

Steps:
- Cook the chorizo sausage in a big skillet over medium-high heat for about 5 minutes or until browned; break sausage up so that it is crumbled.
- Add in green onions and garlic; saute/stir for 2 minutes or until vegetables are tender; at this point, I drain some of the excess drippings.
- In a mixing bowl, add eggs, water, salt, and pepper; whisk to combine.
- Lower heat to medium; Add egg mixture to skillet; let set for 20 seconds.
- Cook and stir 3-4 minutes or until light and fluffy.
- Add cheese and cilantro; stir to blend.
- Transfer mixture to serving plates or use as filling for a flour tortilla; add a dollop of sour cream on top if desired.

- To make the pico de gallo: In a small mixing bowl, combine all of the ingredients. Stir to combine, and set the pico de gallo aside to marinate while you make the remaining components.
- To cook the black beans: In a medium saucepan over medium heat, warm the olive oil until shimmering. Add the chopped onion and a sprinkle of salt. Cook, stirring occasionally, until the onion has softened and is turning translucent, about 5 to 8 minutes. Add the cumin and garlic. Cook, stirring constantly, until fragrant, about 30 seconds. Pour in the drained beans and water. Stir, cover and cook for 5 minutes.
- Reduce the heat to low, remove the lid and use a potato masher or the back of a fork to mash up about at least half of the beans. Continue to cook the beans, uncovered, stirring often, for 3 more minutes. Remove the saucepan from the heat and stir in the salt, pepper and lime juice. Taste and add more salt, pepper, lime juice if necessary. If the beans seem dry, add a very small splash of water and stir to combine. Cover until you’re ready to serve.
- To cook the eggs: In a medium mixing bowl, scramble the eggs with the cream or milk, salt, a few twists of freshly ground black pepper and a pinch of red pepper flakes. In a 10-inch non-stick or well-seasoned cast iron skillet, warm 2 teaspoons olive oil over medium heat until shimmering. Swirl the pan so it’s evenly coated with oil. Whisk your egg mixture one last time and pour it into the skillet.
