Steps:

  • Combine teriyaki marinade& sauce, garlic, chile, lime peel and juice and sesame oil; pour over and marinate steak in fridge for 45 mins.
  • Cook steak to desired doneness.

1/2 cup teriyaki marinade, & sauce
1 clove garlic, minced
1 serrano chili, seeded and minced
1/2 teaspoon grated fresh lime
2 teaspoons fresh lime juice
1 teaspoon sesame oil
1 1/2 lbs boneless sirloin steaks, sliced 3/4 inch thick

Steps:

  • Cook ground beef until brown, drain fat and season to taste. Add 2 to 3 drops of hot sauce and onion.
  • Spread beans in a large 9""x13"" rectangular oven-proof dish and top with cooked meat. Sprinkle with green chiles, both cheeses and taco sauce.
  • Bake for 20 to 25 minutes in a 400 degree oven.
  • Remove from oven and garnish with black olives, sour cream and bell pepper.
  • Serve with Tortilla Triangles around the edges of the dish.

Steps:

  • Mix all ingredients except steak and heat in a medium saucepan, stirring until sugar melts and flavors are combined.
  • Marinate meat in the sauce for 4-5 hours or overnight in the refrigerator, turning occasionally.
  • Remove meat from the marinade, heat and use as a baste or sauce if you like, and sear meat quickly over high heat, about 1 minute per side, and then lower heat to medium-low and continue cooking about another 5 minutes per side until done to your liking.
  • Slice meat on a diagonal against the grain into thin slices.

Steps:

  • Preheat oven to 375.
  • Prepare stuffing according to package directions using 3/4 cup water.
  • Spoon into bottom of a greased 2 qt baking dish.
  • Heat oil in frypan.
  • Add onion and green pepper and cook until tender.
  • Stir in chicken, tomato, corn and taco sauce.
  • Spoon over stuffing.
  • Bake 15 mins.
  • Cover with cheese and bake 5 mins more.

1 package stove top cornbread stuffing mix
1 medium onion, chopped
1 medium green pepper, chopped
1 tablespoon vegetable oil
1 1/2 cups chopped cooked chicken
1 small tomatoes, chopped

So far this is my favorite recipe that I use. It is from Joanna Lund. I make this at least once a month. It has a great taste and the portion size is plentiful. Per serving is 260 calories. The diabetic exchanges per serving are: 2 1/2 protein, 2 vegetable, 1 starch. You won't be sorry for trying it. My 3 year old son eats it too. You won't miss the fat/calories.

Steps:

  • Preheat oven to 375 degrees.
  • Spray an 8-by-8-inch baking dish with cooking spray.
  • In a large skillet sprayed with cooking spray, brown meat, garlic, onion and green pepper.
  • Add salsa, chili seasoning, tomato sauce and ketchup.
  • Mix well to combine.
  • Stir in corn, rice and cheddar cheese.
  • Pour mixture into prepared baking dish.
  • Bake for 20 minutes.
  • Place baking dish on a wire rack and let set for 5 minutes.
  • Divide into 6 servings.
  • HINT: 1 1/3 cups uncooked rice usually cooks to about 2 cups.
