Tex Mex Infused Skewers 6 Recipes

Steps:

• 1. In a large bowl combine 3 tbsp. taco seasoning mix (or less if desired), lime zest and juice and chicken; toss to coat well. Cover and chill 2 hours.
• 2. For sauce, grate garlic clove or use garlic press and combine with salt to form a smooth paste. Place in a small bowl with vegetable oil; mix well. Stir in yogurt and taco seasoning to taste . Cover and chill before serving.
• 3. Thread the chicken alternately with peppers and onion; grill over hot coals 10-12 minutes, turning occasionally. Serve with Yogurt Sauce. (If using wooden skewers, remember to soak them first).

Steps:

• Blend all ingredients till pureed and pour into a small cookie sheet pan to fit the wooden skewers.
• Soak the skewers in liquid for one hour.
• Then skewer your choice of food, fish, chicken, tofu, vegetables, cook on the grill or indoors if you prefer.
• A little trick so the skewers don`t burn is to hang them over the edge of the grill or wrap them in foil.
