TEXAS BUSY DAY SOUP
Got this from my sister-in-law, who got it from someone else, etc. Another name for it is Velveeta Chicken Tortilla Soup (minus the tortillas). You could use any meat. I prefer the Costco Kirkland canned chicken.

Steps:
- Combine first 7 ingredients and warm up. Add cubed Velveeta a little at a time, to keep it from burning, and cook on low heat until Velveeta is completely melted.
- This makes a really large pot of soup. I used my crock pot on low. If you want it a little runny, use more liquids from the ingredients. If you like it a little thicker, use less liquid from the ingredients. It also tends to be a little salty, so you can use no salt added vegetables and low fat Velveeta.

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
- Stir browned ground beef, tomatoes, kidney beans, pinto beans, corn, taco seasoning, and ranch dressing mix together in the crock of a slow cooker.
- Cook on Low for at least 3 hours.
