AIR FRYER SWEET CHILI SALMON
This recipe has been a staple in the Tila house for years. Sweet chili sauce is a quick way to perk up plain salmon and asparagus. The sauce is the perfect balance of sweet, salt, spicy and tangy, and it's naturally gluten free, to boot. I prefer brands made in Thailand. To make this a complete meal, serve it with brown rice or quinoa.

Steps:
- Preheat your air fryer to 375 to 390 degrees F on the fan setting, if available.
- Place your salmon and asparagus in a large bowl. Sprinkle with the seasoned salt and pepper and toss to coat well. Pour in 1/2 cup of the sweet chili sauce (reserve the rest for glazing) and stir to coat well.
- Arrange the salmon and asparagus in the air fryer so that nothing touches.
- Air fry the salmon and asparagus for 6 to 10 minutes, or until they're browned on top and cooked through in the center.
- Transfer the salmon and asparagus to a serving vessel and pour the reserved 1/2 cup sweet chili sauce over the top. Garnish with the scallions and serve with brown rice or quinoa.

- Preheat oven to 400°F (200˚C).
- In a bowl, mix together the salmon, chili sauce, and the scallions.
- Place the fillets on a baking tray lined with parchment paper. Spoon any leftover sauce on top of the salmon.

Steps:
- Put the salmon fillets in a single layer in a shallow non-metallic dish, add the marinade ingredients and turn to coat.
- Cover and marinate in the fridge for 2-3 hours, turing the salmon once.
- Lift the salmon from the marinade and cook under a preheated hot broiler, 3in away from the heat for 5-6 mins on each side until the salmon is opaque and the flesh flakes easily.
- Serve hot garnished with the cilantro leaves and lime wedges.

Steps:
- Whisk chili sauce, soy sauce, garlic and ginger in small bowl; set aside.
- Heat oil in a large skillet. Pat dry the salmon with paper toweling. Season with salt & pepper, if desired. Place salmon fillets in skillet and cook over medium heat on one side about 2 minutes. Flip fillets over and add the prepared sauce over the top, scooping over to glaze.
- Cook for about another 2-3 minutes, allowing sauce to thicken while the salmon cooks. Remove salmon with sauce from pan and serve warm.

- Preheat oven to 400F and move the rack to the middle position. Line a baking sheet with foil or parchment paper for easy clean-up.
- My salmon was already cut into 4 pieces. You can leave it whole or cut it up - that's up to you. Place the salmon, skin-side down, on the baking sheet. Season it with salt & pepper. Spread about a tablespoon of sweet chili sauce on each quarter, totalling about 1/4 cup (I just use the back of a spoon). You can always add a bit more sauce if you wish.
- Roast salmon for 13-15 minutes or until it flakes easily with a fork. Keep in mind that the salmon will continue to cook for a bit after you take it out of the oven. If your salmon is particularly thick (like more than an inch thick in the thickest part), it may need a little more time.
- I like to squeeze some lime juice over top and serve it with jasmine rice, chopped scallions, cucumber, and sesame seeds sprinkled over top.

- In a large baking dish, add salmon in a single layer. Each fillet: sprinkle with a pinch of salt and top with 1 tbsp of Thai sweet chili sauce. Brush or rub with your fingers to coat fish with sauce evenly on top, bottom and sides. Cover and let marinate in the fridge for at least 2 hours or overnight is the best (up to 24 hours).
- Turn on oven's broiler on High and position top oven rack 5" - 6" below the heat source. Line large baking sheet with foil or silicone mat, spray with cooking spray and place salmon fillets skin side down (if any). Coat with remaining marinade from the dish (if any).
- Broil for 8 minutes, rotating baking sheet once. Remove from the oven and brush top of each fillet with 2 tsp of Thai sweet chili sauce. Return to the oven and broil for another 5 minutes or until salmon has caramelized.
