THE CAT'S MEOW DIPPING SAUCE FOR SEARED AHI

This sauce will make you say, "ME-OWWWWWW!" with it's citrus and spice! It's easy to throw together, but beware the wasabi and red pepper flakes! Gato and I like it HOT! Be sure to adjust the "heat" to your family's taste.

The Cat's Meow Dipping Sauce for Seared Ahi image

Steps:

  • Mix all ingredients.
  • Allow to refrigerate, if time allows, so flavors will marry.
  • Bring to room temperature for serving, if time allows.
  • Pre-heat saute pan or griddle to very hot.
  • Sear tuna for 20-30 seconds on all sides.

1 cup lemon juice, fresh
1/2 cup soy sauce (we use low sodium)
2 -3 tablespoons wasabi paste
3 tablespoons pickled ginger, chopped
1 teaspoon red pepper flakes
1/2-1 lb fresh ahi tuna, sushi grade

  • Mix mayonnaise, sugar, vinegar, soy sauce, garlic, ginger, sesame oil, pepper, and cayenne together in a small bowl.
  • Let sit for 5 minutes before serving.

CAT'S MEOW COCKTAIL

I found this recipe in the Houston Chronicle. I haven't tried it yet, but I plan to! This cocktail was created at Vela in New York, in honor of the new movie release of "Catwoman". It's similar to a White Russian (Kahlua, vodka and cream) except that the proportions and the consistency are a little different. The Cat's Meow comes with its own set of drawn-on chocolate-syrup whiskers and a cherry for the nose.

  • Pour Kahlua, vodka, cream and ice into a blender.
  • Blend until thick.
  • Pour into a martini glass.
  • Place a half of cherry in the center for the nose.
  • For whiskers, use chocolate or caramel syrup.

Steps:

  • Season the tuna steaks with salt and cayenne pepper.
  • Melt the butter with the olive oil in a skillet over medium-high heat. Cook the peppercorns in the mixture until they soften and pop, about 5 minutes. Gently place the seasoned tuna in the skillet and cook to desired doneness, 1 1/2 minutes per side for rare.

Pico De Gallo Seared Ahi image

Steps:

  • In a medium bowl, combine tomatoes, green onions, lime juice, jalapeno and cilantro to make"Pico de Gallo" Cover and refrigerate to let flavors blend.
  • Preheat a large skillet over high heat.
  • Brush both sides of tuna with olive oil and season one side with black pepper.
  • Add steaks to hot skillet, pepper side down.
  • Sear for 2 minutes, then turn steak over and reduce heat to medium.
  • Loosely cover skillet with foil and allow steaks to cook 5 minutes for rare, 7 minutes for medium.
  • Serve on top of brown rice and spoon Pico de Gallo over each piece of tuna.
  • Squeeze fresh lemon over the top and enjoy!

Grill tuna 2 minutes per side, until seared on the outside and rare in the center. (If you prefer a cooked center, cook an additional ~2 minutes per side.) Transfer tuna to cutting board. With a thin, sharp knife, thinly slice tuna across the grain (1/4 to 1/2-inch thick slices). Sprinkle with sesame seeds and sliced green onion. Serve with dipping sauce.
