Steps:
- Preheat the oven to 375 degrees Fahrenheit.
- Bend the wings and tuck the tips under the large joint to form a triangle.
- Season the chicken wings on both sides with salt and pepper.
- Set wings in a single layer in a large roasting or baking pan. Use two pans if you have to.
- Bake the chicken wings, turning once, until browned, about 45 minutes.
- Remove the wings from the oven.
- Pour off all the fat from the pan. If necessary, blot the wings with paper towels.
- Return the wings to the pan.
- Pour the barbecue sauce over the chicken wings and return to the oven.
- Bake for 10 minutes.
- Turn the wings over and bake 10 minutes longer.
- Serve hot, at room temperature, or cold.

- For barbecue sauce, in large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, vinegar, brown sugar, Worcestershire sauce, chili powder, cayenne and cumin. Simmer, uncovered, for 8-10 minutes, stirring often. Remove from the heat; stir in pepper sauce. - Tuck in the chicken wing flaps so the wing forms a triangle.
- Combine olive oil with some of the garlic salt and pepper in a large bowl. Add a few chicken wings and turn to coat with seasonings. Add more wings, remaining garlic salt, and remaining pepper and turn to coat. Repeat until all wings are coated. Place on the preheated grill.

- Set oven to 350 degrees F.
- In a saucepan add first 6 ingredients; cook stirring occasionally until onion is softened, about 3 minutes.
- Add vinegar, cook 1 minute.
- Stir in ketchup and preserves; bring to a light boil then reduce heat to low; simmer until mixture is thickened and reduced to 1 cup (about 20 minutes).
- Meanwhile line broiler pan with foil then coat with cooking spray.
- Reserve 1/4 cup sauce.
- In a large bowl toss wings with remaining sauce, then place wings in pan.
