The Real Deal Deviled Eggs image

Steps:

  • Pop out yolks into a bowl and mash with all the ingredients except the paprika.
  • Spoon back into the white egg halves, sprinkle with paprika and chill.

8 hard boiled eggs, shelled and halved lengthwise
1/4 cup mayonnaise
2 teaspoons finely diced onions
2 teaspoons finely diced jalapenos
2 teaspoons vinegar
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons curry powder
1 teaspoon minced parsley
1/2 teaspoon cayenne pepper
paprika

This recipe was my Mother's and she taught me to make them. My sons and their families always request these eggs for all family get-together dinners.

Steps:

  • Peel shells off cooled hard-boiled eggs; slice into halves lengthwise.
  • Remove yolks from whites and place in a small round bowl.
  • Mash yolks with a fork into fine pieces.
  • Add 2 heaping tablespoons Mayonnaise, yellow mustard, diced gherkins and finely chopped jalapeno (seeds removed), and salt and black pepper to taste.
  • Stir mixture until creamy.
  • Spoon mixture into a zip-lock sandwich bag; seal bag and snip off one corner of the bag.
  • Squeeze mixture out of corner of bag into egg white halves.
  • Sprinkle tops of filled deviled eggs with paprika.
  • Chill in refrigerator 1 to 2 hours or until cold before serving.

  • Halve the eggs and put the yolks in a mixing bowl with the remaining ingredients (except paprika). Use an electric mixer to blend ingredients together until smooth (lumps of yolk may remain).
  • Put the yolk mixture in a resealable bag, snip the corner, and pipe the filling into the egg whites.
