BIG OL' MESS (SMOKED SAUSAGE IN SPICY SWEET SAUCE)
This is a grilling recipe, and one that easily transfers to the campfire when camping. You can make it up ahead of time, put it into a cooler of ice and skip the mess at the campsite. A great dish from Marlboro.

Steps:
- Make an aluminum foil bag. Use 2 12" x 18" sheets of heavy-duty foil (or double regular foil) and, (after the ingredients are in the bottom half), crimp the top half on.
- Put the sausage, green pepper and onions in the bottom half of the foil bag.
- Mix the Tabasco up with the sweet and sour sauce and pour it over the sausage mix. Seal the foil bag with the top half. Make sure it is "leak-proof".
- Place on the grill (gas or charcoal) and cook for a total of 45 minutes, turning after each 15 minutes.
- You can slit the bag open when done and serve from it at the campsite.
- If you are cooking this in the hot coals of a campfire, reduce the total cooking time by about 15 minutes and turn every 5 minutes.

Spread a generous amount of the Russian dressing on the remaining slices of bread and make sandwiches. Serve immediately.
THE SHAWNEE MARINA REUBEN SANDWICH
The ultimate Reuben. When I developed this sandwich, the idea was to draw in hungry boaters off the Ohio River and to make them regulars at my deli-restaurant. It worked.

Steps:
- Brush the melted butter on all four sides of the bread. In a large pan or skillet, brown two sides of the bread over medium heat and set aside.
- Add 1/2 of the celery salt to the thousand island dressing and taste. If you like more, add the rest. Set aside.
- In the same pan over medium heat, add the olive oil and sautee the pastrami, the corned beef and, the sauerkraut without mixing them with each other. At the end of 3 minutes, put the meat and kraut on a plate and set aside.
- Over low heat, put an unbrowned (buttered) bread side down in the pan. Layer on the corned beef, pastrami, kraut, Alpine Lace cheese (Alpine Lace is a very mild, wide Swiss Cheese -- substitute Baby Swiss if you can't find it at the grocery), and jalapeno cheese. (Since the jalapeno cheese usually comes in small square slices, that's why you need 1 1/2 slices. The Alpine Lace should be roughly the same width of the bread).
- On the remaining slice of bread, on the browned side, spread the horseradish sauce. Drizzle the thousand island dressing directly on the sandwich and place the horseradish side of the bread DOWN as to mix with the dressing.
- As soon as the bottom of the sandwich browns, carefully flip it over and brown the final side.
- When the bottom of the sandwich is browned, plate it up and cut it in half, on the diagonal. Garnish the plate with the gherkins and the orange slices.

COKE AND SALTED PEANUTS
I love nostalgia food -- and this one came from the late 1950's, early '60s. AND... this particular concoction was consumed exclusively by GIRLS when I was in school. Finally, I tried it (in a secret place where no one would see me!) and it was fantastic! In those days, they had the little 6-ounce Cokes in glass bottles. Now, I think the "new" (copycat) little Coke bottles are 7-ounces but that will work just fine. The second ingredient, a small pack of salted peanuts, is easy enough to obtain. The girls at my school always bought "Tom's" brand from the vending machine but that was probably a local thing. I told my daughter about this when she was in high school (the '90s) and she started the trend all over again because she and her girlfriends all loved it! Be careful not to choke when you try this! *.*

Steps:
- Pour the small packet of peanuts into the ice cold coke and drink/chew.
- NOTE: This seems no good with a glass of Coke -- it has to be the little bottle.
- TIP If you want your cokes SUPER-COLD, stand them straight up in a cooler of ice (up to the necks) and then carefully pour some rock salt around on the ice. Be careful -- too much salt will cause them to freeze solid! Don't get salt on the caps or you'll taste it in the pop. This is an old Carnival sales trick.

REUBEN SANDWICH II
These sandwiches are really delicious and easy to make. They are one of my family's fix-it-quick favorites. I like to serve them with big bowls of steaming vegetable soup and dill pickles on the side. Enjoy!

EASY SOUTHWESTERN GRILLED CHICKEN RUB AND MARINADE
This one comes from Morton's salt and is a fine rub for chicken on the gas grill or for over the campfire when you're camping. You could also use it with equal benefit for baked chicken in the oven. The cooking time listed accounts for marinating time in the refrigerator. Enjoy!

Steps:
- Blend all ingredients.
- Rub this blend on to individual chicken pieces and allow to marinate in the refrigerator for one hour prior to grilling.
- NOTE: This blend can also be converted to a paste by whisking in 3 tablespoons of olive oil per every tablespoon of rub blend. Use the paste on steaks or roasts.
WHITE SAUCE SHRIMP-SPINACH LASAGNE
Well, it's "lasagne" made with linguine *.* It's also sort of a pain to make as it requires some multi-tasking, several steps, but if one follows the instructions it's fairly easy to prepare. In any case, it's delicious enough to be well-worth the effort. I developed this recipe mainly as an elegant entree for dinner parties but it also doubles nicely as a high-end covered dish. Enjoy!

Steps:
- Have the cooked pasta ready for use. Pre-heat the oven to 375-degrees F.
- In a large no-stick skillet, over medium heat, melt the butter and add in the olive oil along with the chopped garlic. Pour about 2/3 of this blend into a bowl and set aside. Continuing to carefully stir over the medium heat, add in the onion, mushrooms and minced jalapeno and allow the mix to tenderize, (about 6 minutes).
- Remove the vegetable blend from the skillet, re-add the reserved melted butter blend and add in the shrimp. Sprinkle the Old Bay seasoning over the shrimp. Sautee over medium heat for 6 minutes, stirring ocassionally. Remove the shrimp from the pan and set aside. (You can discard the butter blend or save it for use in another dish).
- Set up a double boiler with 3 cups of water in the bottom section over high heat. In the top (dry) section, melt the 5 tablespoons of unsalted butter and add in the pre-warmed milk. As it begins to yield a little steam, whisk in the white pepper and the minced garlic. When it comes to a boil, whisk in the flour and continue to whisk until the sauce thickens. Allow the blend to continue at a low boil (adjust temperature if necessary), whisking with great frequency, for 15 minutes. If it gets too thick, add more pre-warmed milk, 1/4 cup at a time until desired consistency is achieved. (You want it about as thick as pancake batter.) At the end of the 15 minutes, remove from heat and set aside.
- Spray a 9" x 13", or larger, casserole dish with the cooking spray. Lay in 1/3 of the white sauce and make sure that most of the bottom is covered. Then, lay in just a little more than half of the pasta, (about 60%). Cover the pasta with all the cottage cheese. Next, spread the spinach all over the top.
- Layer the remaining pasta evenly across the top. Next, evenly distribute the remaining white sauce all over the pasta. Lay the cooked shrimp evenly across the white sauce and then distribute the onion-mushroom-jalapeno mix across the dish. Top this with all the Monterey Jack Cheese and the Asiago chees, and then finish by sprinkling the dried parsley across the top, just as a sort of garnish.
- In the oven, pre-heated to 375-degrees F., place the dish on the middle rack, uncovered, and bake for 30 minutes. At the end of the 30 minutes, change the setting to BROIL, move the rack up to one below the top one, and broil the dish just until there is some light browning across the top (about 2-3 minutes). WATCH THIS CAREFULLY as it will burn quickly! Remove from oven when the top is lightly browned.
- Allow the dish to "rest" for about 10 minutes prior to cutting into serving sizes. Serve with hot, fresh garlic bread, buttered Parker House Rolls, or with Texas Toast.

HOT DR. PEPPER
Here's yet another trip down Nostalgia Lane by the old bone man. (There are more, including county fair specialties on my recipe list). They used to advertise this on American Bandstand (hosted by Dick Clark) in the 50s and this drink's popularity finally died out somewhere around the mid-60s. But you can STILL do it if you have a notion! *.*

Steps:
- Pour the Dr. Pepper into a medium saucepan and heat to about 180-degrees F. (The carbonation will make it look like it's boiling but you can ignore this if you use a thermometer).
- Pour the hot Dr. Pepper into a crystal tumbler and drop in the lemon slices.
- Enjoy!

TOMATO-SHRIMP SCAMPI DIABLO
This dish evolved from my spicy omelette sauce recipe. This chunky sauce just "screamed out" to have seafood added and since butter, vermouth, and garlic are integral to this particular blend, I figured I could add shrimp and call it a scampi of sorts. You could also add calamari rings, bay scallops, mussels, and/or fish chunks if you wished and it would only add to this dish's superb flavor. In any case, it's not pop-your-eyeballs-out hot but you can supplement the heat from the cooking oil by adding a little Tabasco as directed. This is a shrimp dish that will be quickly devoured by a small crowd as I discovered when I first served it as one of multiple appetizers at a family gathering -- it was the first to disappear. As a meal, you can serve this over either cooked Basmati rice or egg noodles. I've offered some ingredient substitutions which have, so far, worked beautifully for me. As a final comment, I love to take this dish camping and cook it in a wok right over an open campfire. Enjoy this dish -- you won't be bored with it, I guarantee that much!

Steps:
- In a large no-stick skillet over medium heat, pour in the cooking oil and the butter.
- When the oil has heated some, drop in the onion and minced garlic and sauté, stirring frequently, until the onion has tenderized, (about 6-8 minutes).
- Next add the stewed tomatoes with the juice and the salsa verde. Allow this blend to reduce for about 5 minutes, uncovered, stirring frequently.
- Add the honey, the vermouth, the raw shrimp, and the Tabasco (if using) and sautee for 6 more minutes, stirring constantly. (If adding mussels and/or fish chunks, cook for an additional 3 minutes and until all mussels have opened -- discard any mussels which fail to open after a few minutes).
- NOTE: If adding additional seafood, you may wish to add some extra liquid during the final sauté. I recommend using canned chicken broth which I have used with great success in this dish.
- You can serve this dish (on small plates) as an appetizer -- or, as a meal, you can serve it over either cooked rice or egg noodles.
