Steps:
- Heat oven to 350°F. Spray 8- or 9-inch square pan with cooking spray.
- In large bowl, beat butter and brown sugar with electric mixer on medium speed about 3 minutes or until light and fluffy. Beat in Bisquick mix, scraping bowl occasionally, until blended. Evenly pat dough in pan.
- Bake 25 to 35 minutes or until golden brown.
- Remove from oven and immediately sprinkle with chocolate chips. Let stand 2 minutes; spread chocolate over bars. Sprinkle with coconut and pecans, pressing lightly to adhere to chocolate. Cool completely, about 1 hour 30 minutes. Cut into 4 rows by 4 rows.

TOFFEE BARS (OR NUT BARS)
A wonderful, graham cracker based chocolate toffee bar that will delight your taste buds! I'm still trying to discover who brought these to our office Cookie Swap party! They were kind enough to share the recipe, so I'm sharing it as well. The version I had was with nuts, so I don't even know if there was any toffee in it!

Steps:
- Preheat oven to 400 degrees F.
- LIne a 10x15-inch baking pan with foil.
- Arrange graham crackers in a single layer in the prepared pan.
- Combine the butter and brown sugar in a saucepan. Bring to a boil.
- Boil for exactly 3 minutes, stirring occasionally. Drizzle over the graham crackers.
- Bake in preheated oven for exactly 5 minutes. Remove from the oven. Sprinkle with the chocolate chips. After 1 minute, spread with a buttered spatula. Sprinkle with the toffee chips.
- Cool to room temperature. Chill until set. Cut or break into bars.
- Store the bars, covered, in the refrigerator.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.

- Preheat oven to 350 degrees. Grease a 9; x 13; pan.
- Cream together the Earth Balance and brown sugar until well blended. Add salt and baking soda and mix well. Add in egg replacer and vanilla.
- Being careful not to overmix, add in flour until just combined. Fold in 1 cup of pecans and chocolate chips.
- Spread ( I had to use my hand and actually "pat") the dough into the prepared baking pan. Sprinkle the remaining chopped nuts over the top of the dough.
- On middle rack of oven, bake about 20-25 minutes. They will look uncooked if you try to cut into them. Resist the urge and let them cool on wire rack for about 1 hour. Cut into bar shapes and enjoy with some yummy Almond Breeze, or your favorite non-dairy milk.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.

- Preheat oven to 350. Reserve 2 tablespoons butter. In large mixer bowl, beat remaining butter and sugar until fluffy. Add flour and cocoa; mix well. With floured hands, pressed into greased 13"x9" pan. Bake 15 minutes.

- 1. Crust. Cream butter; add brown sugar & cream well. Add flour to creamed mixture and work it into a dough with your hands. Pat into an ungreased 9" sq. pand and bake 10 mins. in oven at 350.
- 2. Topping. Beat egg whites until light, then stir in brown sugar & mix well. Add vanilla. Set aside. Sift flour, baking powder & salt together and stir into the brown sugar mixture. A great bar cookie recipe, not gooey or chewy. There is a chopped nut base, then a crumb layer, then a thin spongy spicy cake-y layer. The amounts of spices can be adjusted to your taste. These work pretty well for me. From the archives in my collection. My daughter requested these, reminding me that I used to make them a lot. Things do get mislaid, though. And/or forgotten. Naaahhhh, who forgets anything at my age?!
