These cheesy zucchini patties are an excellent way to use up that abundance of zucchini from the garden. Serve with a bit of tomato sauce or sour cream dabbed on top.

Steps:
- In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
- Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

TOFU ZUCCHINI PATTIES
These tasty Tofu Zucchini Patties have been adapted from a recipe I found in The Australian Women's Weekly's 'The Health Cookbook'. When I've made them for friends, as a casual luncheon dish, they've always been popular - including with those more conservative diners who had never previously eaten tofu! I've suggested serving them specifically with Greek yoghurt - as that's what I generally use - but I've also served them with tzatziki. If you're looking for a recipe for tzatziki, it's hard to beat Ravenseyes' Recipe #306901 or Recipe #157176. BTW, Australian brown onions are what Americans call yellow onions. The original recipe specified "1 cup packaged breadcrumbs" which I've left in the posted recipe but when I've made these I have used processed fresh breadcrumbs. If you find it easier, you can also process the onion and garlic. I've made the herbs optional as you may prefer some other herb combinations, and if you like your food spicier, feel free to modify the recipe so that it best meets your taste preferences.

Steps:
- Blend or process tofu until smooth; transfer to a large bowl and add rice, zucchini, onion, breadcrumbs, rosemary, sage, walnuts, eggs, parsley and garlic; mix well and shape into 12 patties.
- Heat the oil in a large pan, preferably non-stick and cook in batches for about 3 minutes on each side or until browned and heated through; drain on absorbent kitchen paper.
- Serve with the lemon wedges, salad greens or baby spinach leaves and Greek yoghurt or tzatziki.
- NOTES: 2/3 cup (130g/just over 4oz) raw brown rice is needed for this recipe.

YELLOW SQUASH AND TOFU STIR FRY
A great, quick vegetarian dish that includes yellow squash, zucchini, and tofu, making for a beautifully-colored dish. Top with cheese, if desired. You can use butter instead of olive oil, if desired.

- Heat olive oil in a large skillet or wok over medium-high heat. Cook and stir garlic in hot oil until just fragrant, about 30 seconds. Add squash and zucchini, cook and stir until vegetables soften, about 7 minutes. Transfer squash mixture to a bowl.
- Place skillet back over medium-high heat, place tofu pieces in the skillet, and top with brown sugar and soy sauce. Cook and stir until each side of tofu is golden brown, 3 to 5 minutes.
- Return squash mixture to the skillet; cook and stir until heated through, about 3 minutes. Stir in Sriracha sauce and season with salt and black pepper.

THE BEST ZUCCHINI PATTIES
I can't for the life of me remember where this recipe came from but I have been making these for about 30 years now. Everyone absolutely loves them. I nearly always double or triple the recipe because we love them as snacks or in our lunch the next day. Go by the recipe and don't add any extra salt as there is enough in the cheese and crackers. Enjoy! P.S. 8-7-09 I have been making this for over 30 yrs. and have never had a problem with watery zucchini. Might just be a climate issue.

ZUCCHINI TOFU CURRY
This is a fast dish to make and tastes great! My family loves it so much that I double the tofu. There is no prep time because as soon as I put my side on the stove I start cubing and chopping whatever needs to go in the wok, in the order it is listed. Add more heat if you like, I can't because I'm the only one who likes it hot!

Steps:
- Drain and dice tofu.
- Add tofu to hot oil in wok and saute, drain excess liquid and continue to saute to desired crispiness.
- Add chopped onion and garlic. Saute until soft.
- Add coconut milk and spices.
- Cut zucchini into bite size pieces and add to wok.
- Let everything cook for 7-10 minutes more, depending on desired doness of zucchini and thickness of sauce.
- I like serving millet as a side which takes 20 minutes to cook, so I time it with the curry to make sure everything is done at the same time!

Found this in a newspaper a few weeks ago by Sherry McCarty, Albuquerque, NM. I only added extra onion and cheese. Marinara Sauce is suggested for an Italian flair. I used Dee514's recipe #30903. This is a very good light meal.

- Combine Bisquick, cheese, salt, eggs, zucchini and onion in a mixing bowl.
- Blend well. Melt butter in a large skillet.
- Spoon heaping tablespoons of zucchini mixture into skillet.
- Fry for 3 to 5 minutes per side, until golden brown.
- Place browned patties on a paper towel.
- Add more butter to skillet when necessary for additional batches.

- Wash and dry vegetables. Grate zucchini and season with salt. Massage the salt into the grated zucchini and let it rest for about half an hour. During this time the zucchini will let out water. After half an hour, take the grated zucchini and squeeze out as much excess water as you can. Try placing grated zucchini in a clean kitchen cloth to help you squeeze. Once the water is removed, place zucchini in a bowl. It should have reduced in size considerably.
- Add chopped spring onion and parsley, minced garlic, crumble in some tofu, add a beaten egg and some breadcrumbs. Stir well until the mixture is thoroughly combined. Take a small amount of zucchini dough, about a table spoon, and roll it between your hands into the shape of a ball, then, squeeze down to get the form of a patty. Repeat until you've used all the mixture.
- Heat a pan on medium and add about a table spoon of olive oil. When hot, add in zucchini patties and cook for about 4 minutes on medium, or until the patties turn golden brown. Flip each patty over and bake another 2-3 minutes on the other side. Once done, remove from pan and set aside. Repeat until you've used up all the patties.
- Meanwhile prepare peanut sauce: in a food processor add peanut butter, water, soy sauce, peanut oil, agave syrup, juice of a lemon and 1 clove garlic, minced. Process until smooth. If the sauce is too thick, add more water as to your liking. Transfer sauce to a container.
