TOMATILLO SALSA

Make this healthy side dish as part of a Mexican feast, with fresh tomatillos, onions, chillies, avocado and lime. Serve alongside burritos and tacos

Tomatillo salsa image

Steps:

  • Put the tomatillos in a pan of boiling water, cook for 3 mins or until the skins split, remove with a slotted spoon and cool for 5-10 mins. Blitz in a food processor with the coriander, onion, chilli, garlic and lime. Tip into a bowl, stir in the avocado and season to taste.

small pack coriander
1 white onion , chopped
2 green chillies , roughly chopped
1 garlic clove , roughly chopped
1 lime , juiced
1 avocado , cut into small cubes

SALSA DE TOMATILLO

This is the 'salsa de tomatillo' that I grew up with. It can be used as a sauce for grilled chicken, fish or shrimp, as the basis for green chilaquiles (pour over tortilla chips, shredded cooked chicken and shredded Monterey Jack, then heat under the broiler), and as a dipping sauce for chips. Delicioso!

Salsa De Tomatillo image

Steps:

  • Place tomatillos in a nonreactive saucepan with enough water to cover. Bring to a boil. Simmer until tomatillos soften and begin to burst, about 10 minutes.
  • Drain tomatillos and place in a food processor or blender with onion, garlic, jalapeno peppers, cilantro, salt and pepper. Blend to desired consistency.

10 tomatillos, husked
1 small onion, chopped
3 cloves garlic, chopped
2 jalapeno peppers, chopped
¼ cup chopped fresh cilantro
salt and pepper to taste

PASILLA SALSA

When dried-as you will usually find them-pasillas are often called chile negro, or black chile. They are thin, small, shriveled, and very dark. They are also earthy and not especially hot, so they yield a rich, densely flavored sauce traditionally used with lamb, beef, and chicken. If you want some heat, soak a dried chipotle or two with the pasillas. If you can find fresh tomatillos, use them in place of the tomatoes. Slip off the papery husks and add a little water to the sauce.

Pasilla Salsa image

Steps:

  • Soak the pasillas in hot water to cover until they are quite soft, about 10 minutes. Meanwhile, put the lard in a small saucepan over medium heat; a minute later, add the tomatoes, along with some salt and pepper. Cook, stirring occasionally, until soft, about 10 minutes.
  • Drain the chiles and reserve some of their soaking liquid. Remove their stems and seeds; tear each into several pieces as you do so. Combine in a blender with the tomatoes, garlic, onion, and a little of the soaking liquid. Puree, adding more liquid if necessary to allow the machine to do its work. Taste and adjust the seasoning, then serve warm or refrigerate.

3 to 5 pasilla chiles, at least 1 ounce, to taste
2 tablespoons lard or neutral oil, like corn or grapeseed
4 small tomatoes, cored and chopped
Salt and black pepper to taste
2 garlic cloves, peeled
1/2 large white onion, peeled and chunked

Salsa de Chile Pasilla de Oaxaca image

Steps:

  • Place tomatillos in a small saucepan, and add enough water to come about half of the way up. Cover, and cook over medium heat until tomatillos are soft, about 10 minutes. Strain, reserving liquid. Add enough water to the reserved liquid to make 1/2 cup.
  • Meanwhile, heat a small heavy skillet or a comal over medium heat until hot. Add garlic to pan, and cook until soft and well charred on all sides, 5 to 10 minutes. Peel, and transfer to jar of a blender. Add chiles to pan, and toast for 2 minutes per side. Tear chiles into pieces, discarding stem; transfer to blender jar. To the blender, add cooking liquid and a large pinch of salt. Blend until smooth. Add tomatillos, and blend. Will keep in an airtight container in the refrigerator for up to 1 week.

1/2 pound (about 11 medium) tomatillos, husked, rinsed, and quartered
3 medium garlic cloves
3 small chile pasilla de Oaxaca

  • Remove the husks from the tomatillos and rinse in lukewarm water. Add tomatillos, chile de arbol and onion to a saucepan. Cover with water and heat to medium. When it comes to a boil, reduce heat slightly and cook for 10 minutes.
  • Using a slotted spoon, transfer the tomatillo mixture to the blender. Season with salt. Blend on high for just a few seconds.
  • Pour salsa into a sauce pan and heat to medium heat. Just bring to a light simmer and cook the salsa for 8-10 minutes. Cooking the salsa helps remove the natural pectins in the tomatillos and keep your salsa from clumping up when refrigerated. Once salsa cools you could add in some chopped onion and cilantro. It's an option.

  • Husk and rinse the tomatillos, cutting out the stems. Roast the tomatillos in the oven at 400F for 15 minutes or so.
  • Wipe off any dusty crevasses on the Pasilla de Oaxacas using a wet paper towel, then de-stem and de-seed them. Roast the chili pieces in the oven at 400F for 1-2 minutes. Add the roasted chile pieces to a bowl and cover them with the hottest tap water you've got. Let them reconstitute for 20-30 minutes
  • Drain the reconstituted chiles and add the chile pieces to a blender along with the roasted tomatillos, 2 peeled garlic cloves, a sliver of onion, and a pinch of salt. Combine well, tasting for salt and heat level.
