For those not concerned about fat intake, I add cheese. This gets thumbs up from the teenagers and boyfriend who hate anything low-fat.

Basil Turkey Burgers image

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Mix ground turkey, onion, egg substitute, basil, horseradish, soy sauce, pepper, and garlic in a large mixing bowl; form into 4 patties.
  • Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve on buns with lettuce and tomato.

Basil Burgers with Sun-Dried Tomato Mayonnaise image

Steps:

  • In a small bowl, combine tomatoes and water. Let stand for 5 minutes; drain. In a food processor, combine mayonnaise and tomatoes; cover and process until blended. Chill until serving., In a large bowl, combine the Worcestershire sauce, basil, Italian seasoning, garlic, pepper and salt. Crumble beef over mixture and mix well. Shape into 12 thin patties. Place 2 tablespoons cheese on six patties; top with remaining patties and press edges firmly to seal., On a greased grill, cook burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with mayonnaise mixture and, if desired, additional basil.

Steps:

  • Cut onion in half. Finely chop one half and thinly slice the remaining half. Combine 1/2 cup feta, sun-dried tomatoes, chopped onion, salt and pepper in a large bowl. Crumble turkey over mixture and mix well. Shape into six patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., Meanwhile, in a small nonstick skillet coated with cooking spray, saute sliced onion until tender. Serve burgers on buns with onion and remaining feta.

TOMATO & BASIL TURKEY BURGERS

I'd never used ground turkey before but saw this recipe in Recipes + and was itching to try it. These burgers are so easy & so full of flavour, you can use any flavour gourmet chunky dip, I used a mixture of the red pepper & basil ones. In Australia these dips are made by Wattle Valley and a few other companies, I'm not sure of the availability overseas but recipe #222384 or something similar could be used as the dip addition.

Steps:

  • Combine mince, breadcrumbs, egg and dip together in a mixing bowl, season with salt & pepper.
  • Shape into 4 large flat patties, cover & chill for 20 minutes.
  • Heat a barbeque or non-stick frypan over moderate heat, cook for 3-4 mins each side or until tender but still moist.
  • Stack patties on toasted buns (smeared with mayo if using) with greens, tomato & onion.
  • Dollop with extra dip & serve.

  • To a large bowl, add ground turkey, basil, panko, egg, salt, pepper, vinegar, and parsley. Grate the onion and garlic over the bowl to catch all the juice. Mix everything together using your hands until it is combined. Do not overmix.
  • Divide meat mixture into four portions. Form one portion into a patty around a piece of mozzarella, making sure that cheese is completely encased by meat. Repeat process for the remaining meat, forming 4 patties total.
  • Place on a sheet pan lined with foil and broil on high (about 4-5 inches from the heat) for about 6-8 minutes (or until golden brown), flip over, cook for another 4-6 minutes or until burgers are cooked through to 165°F.
