TOMATO CHEDDAR GALETTE

Steps:
- Preheat the oven to 375°F.
- Whisk together the flour, salt, and cheese powder (if using). Note: The cheese powder is optional but is a really awesome addition -- use the extra in biscuit dough or over popcorn!
- Cut the cold butter into the flour mixture until it is in coarse, uneven pea-sized lumps. Drizzle the ice water over top and stir with a fork until the dough just begins to come together.
- Turn the dough out onto a surface and begin to gently knead and press it together, turning it over onto itself and handling it carefully to avoid warming up the butter. If there are too many dry spots, drizzle a tablespoon or two more ice water over top (a spray bottle actually works really well here to evenly disperse the water).
- Once the dough comes together, press it gently into a disc. If your kitchen is warm, refrigerate the dough for 30 minutes until warm. Otherwise, go ahead and roll it out right away.
- Roll the dough out into roughly a 13" circle. It should be very thin, but if there are any tears, make sure to patch them so the filling doesn't seep out.
- Spread the mustard on top of the dough circle, leaving about 1 1/2" inches bare on on the edges. Sprinkle the grated cheese on top of the mustard. Transfer the dough circle to a baking sheet.
- Arrange the sliced tomatoes neatly in circles on top of the grated cheese. Fold the edges of the pastry up, pleating as you go to seal the edges. Check to make sure there are no spaces or tears where the filling can seep out.
- Drizzle the olive oil over top of the tomatoes, then sprinkle on the flaky salt and herbs.
- Bake the galette for about 30 minutes, or until the crust is golden brown and the filling is bubbling.
- Let cool slightly, and serve warm.
CHERRY TOMATO AND CHEESE GALETTE
While 'galette' sounds a little fancy, they're actually one of the easier type of pies to make, and above and beyond the simple technique, they are incredibly adaptable to whatever is in season. Whether that's sweet fruit or savory vegetables, there are very few things you can't galette. Garnish with fresh basil if desired.

- Combine flour, cornmeal, salt, and frozen butter in a food processor. Pulse until mixture resembles coarse crumbs. Add vinegar and ice water and pulse again until mixture comes together in clumps, scraping down the sides of the bowl as needed.
- Wrap dough up in plastic wrap and shape into a disc. Refrigerate until thoroughly chilled, about 1 hour.
- Combine goat cheese, egg yolk, kosher salt, pepper, cayenne, and basil in a bowl. Mix using a spatula until smooth and soft.
- Place dough on a lightly floured work surface and sprinkle top with flour. Roll out into 1/8-inch-thick circle, about 13 inches in diameter. Roll dough over the rolling pin and transfer onto a 12-inch pizza pan; refrigerate until ready to use.
- Preheat the oven to 425 degrees F (220 degrees C).
- Mix tomatoes, 1 tablespoon olive oil, and Dijon mustard together in a bowl.
- Drop spoonfuls of the cheese mixture onto the dough and spread evenly, leaving about 1 1/2-inch space on the sides. Place tomato mixture on top of cheese using a slotted spoon. Fold excess dough up and over tomatoes, creating a pleat every 3 inches or so by gently pressing and folding.
- Combine beaten egg and water in a small bowl; brush over crust. Sprinkle Parmigiano-Reggiano cheese over galette.
- Place a foil-lined pan on the rack under galette to catch any possible drips. Bake in the preheated oven until well browned on bottom and top, 30 to 35 minutes.
- Remove from the oven and let cool completely, about 30 minutes. Sprinkle with remaining olive oil and sea salt. Serve room temperature or chilled.

TOMATO GALETTE
Please a crowd with this gorgeous galette. Bursting with colour and sweet roasted tomatoes, it transports well and can be eaten hot or cold

- Tip the tomatoes into a colander set over a large bowl, sprinkle over 1 tsp salt and set aside for 1 hr to draw out the moisture. Meanwhile, make the pastry. Tip the flour, butter and a good pinch of salt into a food processor and blitz to a fine breadcrumb-like consistency. Beat the eggs in a jug, then tip into the processor and pulse to a soft dough - if it seems dry, add ½ tsp cold water at a time until it comes together. Shape into a disc, then wrap and chill for 20 mins.
- Heat the oven to 180C/160C fan/gas 4. Tip the tomatoes into a large bowl with the cheese, garlic, herbs and a good grinding of black pepper. Gently combine using your hands and set aside.
- Roll the chilled pastry out on a lightly floured surface to a roughly 30cm circle. Pile the tomato mixture into the middle, leaving a roughly 5cm border around the edge. Brush the exposed pastry border with some beaten egg, then fold the border up so it slightly overlaps the tomato filling. It doesn't need to be even or neat.
- Brush the pastry with more beaten egg, then bake for 40-50 mins until the pastry is golden and the tomatoes have softened and are tender.

- Place a large rimmed baking sheet in oven, and preheat oven to 425°F; let baking sheet heat in oven 20 minutes. Meanwhile, arrange heirloom tomato slices and halved cherry tomatoes (cut side up), on a double layer of paper towels; sprinkle evenly with 1/2 teaspoon of the salt. Flip heirloom tomato slices over, and sprinkle other sides of heirlooms evenly with remaining 1/2 teaspoon salt. Let stand at room temperature 10 minutes.
- While tomatoes stand, stir together spreadable cheese, Cheddar, basil, crushed red pepper, and black pepper in a small bowl. Roll out piecrust on a sheet of parchment paper into a 12-inch round. Spread cheese mixture evenly over dough round, leaving a 1 1/2-inch border.
- Gently blot tops of tomatoes with clean paper towels to remove excess moisture. Arrange tomatoes on cheese mixture on dough round. Fold dough edge up and over tomatoes, folding in at the border and pleating dough as needed. Brush edges lightly with egg.
- Carefully place parchment paper with galette on preheated baking sheet. Bake in preheated oven until filling is bubbly and crust is golden brown, 25 to 30 minutes. Let cool on baking sheet 10 minutes. Garnish with basil leaves and additional black pepper.
