SARASOTA'S FRESH TOMATO AND OLIVE RELISH

A simple fresh tomato relish. Serve this over fresh fish, chicken, or lamb. Just a few minutes to put together, let it set at room temp for 5-10 minutes and it is ready to enjoy.

Steps:

  • Relish -- Just mix everything together in a small bowl. Let set at room temp for 5-10 minutes and serve. It is that easy.

6 -8 plum tomatoes, lightly seeded and diced
2 tablespoons capers
2/3 cup green olives with pimiento, sliced
1 large shallot, fine diced
1 teaspoon minced garlic
4 tablespoons fresh basil, fine diced
2 teaspoons olive oil
pepper

Steps:

  • Cook 2 chopped onions in a skillet with 2 tablespoons olive oil and 1/2 teaspoon salt over low heat, covered, 10 minutes. Uncover and cook until golden, 30 more minutes. Add 1 minced garlic clove, 1 tablespoon tomato paste, 1/2 cup pitted kalamata olives and 1/4 cup white wine; cook 10 more minutes.

Steak Sandwich on Toasted Garlic Bread with Tomato-Black Olive Relish with Skillet Fries image

Steps:

  • Mix together 1/4 cup of olive oil and the garlic and let rest for 30 minutes. Preheat broiler. Brush both sides of the bread with the garlic oil, place on a baking sheet and broil for 1 to 2 minutes on each side, until lightly golden brown. Heat grill pan over high heat until smoking. Brush steak on both sides with the remaining 2 tablespoons of olive oil and season with salt and pepper to taste. Grill for 4 to 5 minutes until golden brown on 1 side, turn over, reduce heat to medium and continue cooking to medium-rare doneness, 5 to 6 minutes. Remove from heat, let rest 10 minutes and slice into 1/4-inch thick slices.
  • Combine all ingredients in a bowl.
  • Assemble: Arugula Toasted Italian bread Sliced steak Tomato-Olive Relish
  • Place arugula on 4 slices of toast. Top with several slices of steak and a large spoonful of relish. Top with the remaining bread slices.
  • Heat olive oil in a medium cast iron skillet over medium heat. Add onions and cook until soft. Add peppers and garlic and cook for 3 to 4 minutes. Add potatoes and cook until golden brown, season with salt and pepper.

Steps:

  • Mix cherry tomatoes, olives, 2 tablespoons extra-virgin olive oil, mint, and vinegar in medium bowl. Gently stir in feta cheese. Season relish to taste with salt and pepper.

  • In a parchment lined sheet tray, layer bottom with sliced shallots. Place salmon skin side down over shallots. (If your salmon is skinned, place it skinned side down over shallots). Brush on oil and sprinkle salt, pepper and oregano over fish. Place a second piece of parchment paper over salmon, pressing parchment onto salmon surface.
  • Bake for 8 minutes and remove top parchment. Bake for an additional 6-9 minutes depending on the thickness of the salmon filets. They should be just cooked through.
  • While salmon is cooking, in a medium bowl, combine chopped tomatoes, chopped olives, lemon zest, lemon juice, parsley, salt and pepper. Stir to combine and hold until salmon is cooked.
