- In a large skillet, heat oil over medium-high heat. Add garlic; cook and stir until tender, 30-45 seconds. - Heat oil in a skillet over medium heat. Cook garlic in the hot oil until golden, about 5 minutes. Stir beans into the oil; season with salt. Cook and stir the beans until hot, about 5 minutes. Stir tomatoes into the beans; cook and stir until the tomatoes soften, about 5 minutes more.
- Pour broth over the beans mixture; stir. Cook the mixture at a simmer until the liquid reduced in volume by about half, about 15 minutes. Season with pepper.

ROASTED TOMATO AND WHITE BEAN STEW
This hearty, flexible stew comes together with pantry ingredients and delivers layers of flavors. Cherry tomatoes, roasted in a generous glug of olive oil to amplify their sweetness, lend a welcome brightness to this otherwise rich dish. Onion, garlic and red-pepper flakes form the backbone of this dish, to which white beans and broth are added, then simmered until thick. While this stew is lovely on its own, you could also add wilt-able greens such as kale, escarole or Swiss chard at the end, and toasted bread crumbs on top. The dish is vegan as written, but should you choose to top your bowl with a showering of grated pecorino or Parmesan, it would most likely work well in your favor.

- Heat the oven to 425 degrees. In a small bowl, gently toss together the parsley and lemon zest with your hands until well combined; set aside.
- In a large baking dish or on a sheet pan, toss the tomatoes with 1/4 cup oil and thyme; season well with salt and pepper. Roast tomatoes until they have collapsed and begin to turn golden around the edges, 20 to 25 minutes.
- When the tomatoes are almost done roasting, heat 2 tablespoons oil in a large (12-inch), deep skillet or Dutch oven over medium. Add the onion, garlic and red-pepper flakes and cook until the onion is softened and the garlic is fragrant, 4 to 5 minutes. Stir in the rinsed beans and broth and bring to a simmer. With the back of a spoon or spatula, gently smash about ½ cup of the beans so they slightly thicken the broth. If you want a thicker stew, crush some more of the beans. Season with salt and pepper.
- When the tomatoes are finished roasting, add them directly to the stew along with any juices that have been released. Simmer for 5 to 10 minutes more so the flavors become friendly; season to taste with salt.
- Ladle into shallow bowls. Top each serving with some of the lemon-parsley mixture and drizzle with some more olive oil, and season with flaky salt, if you like. Serve with toasted bread.

- Add the bacon to a large Dutch oven and cook over medium heat until light golden (not crisp). Drain off the excess fat.
- Add the onions to the pot; cook until the bacon and onions are golden brown. Add the green beans and tomatoes, and season to taste with salt, black pepper and cayenne. Stir gently to combine.
- Cover the pot, reduce the heat to low and simmer for 1 hour.
TOMATO AND RUNNER BEANS

- Steam the beans in a foil covered colander over your potatoes or blanch in salted boiling water until tender.
- Whilst the beans are cooking, make a quick tomato sauce by frying the garlic gently in some olive oil. Add the tomatoes and bring to the boil.
- Add a little salt and pepper and simmer for about 15 minutes until you have a thick tomato sauce. Season, to taste.
- Stir the beans into the sauce until they are all covered

- Trim ends of beans;cut into 1 1/2 inch lengths.
- In a large saucepan cook beans in lightly salted water for about 3 minutes; drain well.
- In a large non stick skillet, heat oil and add onion, garlic and basil.
- Cook for 2 minutes or until softened.
- Add remaining ingredients, except beans, and cook for 3 minutes then add beans.
- Simmer for an additional 5-10 minutes until tender, stirring often.
- If necessary add more water to keep mixture moist.
- TO freeze: label and freeze in freezer bags or freezer containers for up to 4 months.
- To serve: defrost in fridge overnight and then reheat.
- Serve as a side dish or as a pasta sauce and sprinkle with parmesan cheese if desired.

This is one of those make loads and eat for days recipes - easy and tasty. If you absolutely must, you can use canned tomatoes - but only if you can't get fresh tomatoes. I got the original recipe from Australian Women's Weekly Low Fat Meals in Minutes book.

- Fry onion and garlic in a pan, until onion is soft.
- Stir in the chopped tomatoes, stir more until tomatoes are soft.
- Add stock and the sauces, bring to boil and let simmer covered for 30 minutes. If you like your tomato soup smooth, you can blend the soup after this point. I like mine chunky.
- Stir in parsley and the beans. Simmer uncovered for five minutes or so, until the beans are hot.
POTATOES, TOMATOES AND BEANS
One of my favourite late summer dishes. I serve it as a stew, with fresh bread and butter, or else I ladle it over steamed rice. I guess you could serve it as a side dish but I think of it as a nice vegetarian supper. Reheats beautifully. If you can find decent green beans in the winter, you can make this with canned crushed tomatoes - 2 or 3 cups depending on how soupy you would like it.

- Wash and trim the beans, and cut them into bite sized pieces.
- Wash, trim and cut the potatoes in 1 cm dice.
- Boil the potatoes and the beans separately until just tender.
- Peel and chop the tomatoes and the onion.
- Sauté them in the olive oil until the tomatoes fall apart and the mixture thickens slightly.
- Add the seasonings and the drained potatoes and beans, and simmer for 10 to 15 minutes to amalgamate.

- To a large (12 inch) skillet, add olive oil, miso paste, tomato paste, and red pepper flake. Turn the heat to medium, and cook, stirring continuously, until the tomato and miso pastes start to darken. Carefully add the tomatoes along with their juice. Scrape any darkened bits from the bottom of the pan, and then bring the mixture to a simmer, breaking up the large chunks of tomatoes as they being to warm through.
- Slice your bread into ½ inch thick pieces, and lightly drizzle each side with olive oil. Bring a cast iron skillet or grill pan to medium-high heat, and toast each slice of bread on each side until toasted and slightly charred. Generously spoon the Jammy Italian Tomatoes and Beans onto a serving plate, or into individual bowls. Drizzle with good olive oil and top with fresh basil and a few flakes of Maldon salt. Place toasted bread on the side of the plate along with a serving spoon.
- Cook pasta according to package directions, reserving a bit of the pasta water before draining. Toss the drained orecchiette with the Jammy Italian Tomatoes and Beans to taste, using a bit of the pasta water to thin out the sauce is necessary. Topped with fresh basil, a drizzle of good olive oil, and a few flakes of course maldon salt.
