THREE-BEAN CASSEROLE

You know you have a winning recipe when it shows up again and again, no matter where you are or what the occasion. And so it is with this terrific three-bean recipe that's perfect for potlucks and other gatherings.

Steps:

  • Heat oven to 400°F.
  • In 10-inch skillet, cook sausage, celery, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain.
  • Mix sausage mixture and remaining ingredients in ungreased 3-quart casserole. Bake uncovered about 45 minutes, stirring once, until hot and bubbly.

1 lb bulk pork sausage
2 medium stalks celery, sliced (1 cup)
1 medium onion, chopped (1/2 cup)
1 large clove garlic, finely chopped
2 cans (21 oz each) baked beans (any variety)
1 can (15 to 16 ounces) lima or butter beans, drained
1 can (15 to 16 ounces) kidney beans, drained
1 can (8 oz) tomato sauce
1 tablespoon ground mustard
2 tablespoons honey or packed brown sugar
1 tablespoon white or cider vinegar
1/4 teaspoon red pepper sauce

BAKESALE BETTY'S FRIED CHICKEN SANDWICH

From one of my favorite restaurants in Oakland. Grabbed this recipe from muffintop's blog when I got a hankering. Also made this sandwich using fried tilapia. Still good but I found that all I really wanted to eat was the coleslaw filling. Hope you have an appetite cause this is one huge sandwich.

Bakesale Betty's Fried Chicken Sandwich image

Steps:

  • Season chicken breasts with kosher salt. Let sit at least 5 minutes. Fill a wide, shallow nonreactive bowl or casserole dish with buttermilk. Add the chicken and soak in the refrigerator for 1 hour up to overnight.
  • For the vinaigrette: Combine mustard, vinegar and salt in a bowl. Slowly whisk in olive oil until well blended.
  • For the coleslaw: Macerate onions in the cup of red wine vinegar, and let sit at least 20 minutes. Remove onions and discard vinegar. Toss onions with jalapeno, parsley, cabbage and salt. Toss with vinaigrette until evenly coated.
  • To fry chicken: Pour vegetable oil into a large stockpot. Do not fill up more than halfway, or the oil could splatter. Bring oil up to 365°, using a digital thermometer/candy thermometer to monitor the heat. Prepare the the breading while waiting for oil to heat up.
  • In a wide shallow bowl, mix flour, cayenne, salt and pepper. Pull a chicken breast out of the buttermilk one by one, letting excess drip off, and dredge completely in flour. To create a thick crust, place in buttermilk and dredge in flour a second time. Do not drain or shake off excess buttermilk or flour during the breading process.
  • When the oil is at 365°, carefully place chicken pieces into oil one by one. Let it cook for a minute before disturbing chicken, then help it "swim" in the oil with tongs, until it is evenly cooked, about 5-7 minutes. Remove chicken from oil and drain on paper towels. Season immediately with salt.
  • For the sandwich: Place fried chicken breast on bottom of torpedo roll and top generously with coleslaw.
  • Per serving: 995 calories, 52 g protein, 63 g carbohydrate, 58 g fat (8 g saturated), 95 mg cholesterol, 1,497 mg sodium, 6 g fiber.

4 boneless skinless chicken breasts, about 6 ounces each
kosher salt
1 quart buttermilk
1 tablespoon Dijon mustard (Edmond Fallot Dijon mustard is what Betty uses)
3 tablespoons red wine vinegar
1 teaspoon kosher salt
1/2 cup extra virgin olive oil (Bariani extra virgin olive oil is what Betty uses)
1 small red onion, very thinly sliced
1 cup red wine vinegar
2 jalapenos, seeded, cut in half and sliced crosswise (I've used a green bell pepper instead and it's still wonderful)
1/4 cup parsley, chopped
1/2 green cabbage, core and outer leaves removed, and very thinly sliced
kosher salt
1 lb all-purpose flour
1 tablespoon cayenne pepper
1 tablespoon kosher salt (or more to taste)
1 1/2 teaspoons fresh ground pepper
2 quarts vegetable oil, for frying
4 rolls, sliced lengthwise (Betty uses Acme Bakery torpedo rolls)

Steps:

  • Pour pasta (from box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally. Drain pasta. Rinse with cold water; drain well.
  • In large bowl, stir together seasoning (from box), mayonnaise and Dijon mustard to make dressing.
  • Add pasta, cheese, chicken, ham and spinach to dressing mixture in bowl; toss to gently coat. Serve immediately, or cover and refrigerate until serving.

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease two 8- or 9-inch round cake pans, or spray with baking spray with flour.
  • Make and bake cake as directed on box for 8- or 9-inch rounds. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour.
  • In medium bowl, beat whipping cream with electric mixer on high speed until slightly thickened. Gradually beat in powdered sugar until stiff peaks form. Fold in brandy. In another small bowl, mix pie filling and almond extract.
  • On serving plate, place 1 cake layer, rounded side down. Spread with half of the whipped cream, then 1 cup cherry mixture to within 1 inch of edge. Top with second layer, rounded side up. Frost top with remaining whipped cream. Spoon remaining cherry mixture over top. Sprinkle with sliced almonds. Store covered in refrigerator.
