TORTELLINI PRIMAVERA WITH GORGONZOLA SAUCE

This is a nice vegetarian tortellini pasta option. The Gorgonzola cheese gives it a hearty flavor, and my kids like it.

Tortellini Primavera with Gorgonzola Sauce image

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook both kinds of tortellini in the boiling water until they float, 3 to 5 minutes. Drain, return to the pot, and keep warm.
  • Heat olive oil in a large skillet over high heat. Cook and stir snow peas, mushrooms, carrots, green onions, garlic, and salt until vegetables are tender-crisp, about 3 minutes. Pour vegetable mixture into the pot with the cooked tortellini and toss.
  • Add cream, 1/2 the Gorgonzola cheese, butter, and pepper to the pot with the pasta mixture. Cook over medium heat until heated through and cheese has melted, about 5 minutes. Sprinkle remaining Gorgonzola cheese on top and serve immediately.

Tortellini and Sausage in Gorgonzola Cream Sauce image

Steps:

  • Boil water in a large pot to boil the tortellini according to package directions.
  • Heat olive oil in a large skillet over medium heat, add onion. Saute the onion for 5 minutes, stirring occasionally until softened. Add sliced mushrooms, crushed red pepper and cayenne pepper and continue cooking for 5 minutes, add the sausage and saute mixing all together allowing the ingredients to caramelize and brown on the edges, about 5 more minutes.
  • Add wine, bring to a low simmer for about 2 minutes, stirring and gently scraping the bottom of the pan with a wooden spoon. Pour in the Alfredo sauce, stir together.
  • As it starts to bubble add the cheeses, stir to blend until melted. Add the hot cooked tortellini and fold over gently to coat the pasta. Sprinkle with chopped parsley and serve immediately.
