CRISPY DINER STYLE HASH BROWNS

Steps:
- Wash and peel the potatoes, then grate them on the large holes of a box grater.
- Place the shredded potatoes in the center a thin, clean, dish towel. Gather the towel around the potatoes and squeeze as much water out of them as you can.
- Heat the oil in a large skillet over medium heat.
- Add the potatoes and spread out into a thin layer. Sprinkle with salt, and cook for about 4 minutes, until the bottom turns golden brown.
- Flip the potatoes and cook an additional 2-4 minutes on the other side, until golden brown.

- Rinse potatoes in a colander under cold water until water runs clear. Squeeze firmly to remove excess liquid. Transfer to a large bowl. Add salt and pepper; toss to coat.
- Heat 6 tablespoons oil in a large nonstick skillet over medium-high heat. Add half of potatoes; press gently into an even layer. Sprinkle with scallion whites. Top with remaining potatoes; press gently again. Cook until golden brown on bottom and sides, 10-15 minutes.
- Slide hash browns onto a plate. Carefully place skillet upside down over hash browns and flip to invert into skillet, browned side up. Drizzle remaining 2 tablespoons oil around sides of skillet. Cook hash browns until bottom is golden brown, 10-15 minutes longer; slide onto a plate and season with sea salt. Top with scallion greens and cut into wedges.
- DO AHEAD: Hash browns can be made 1 hour ahead. Place on a wire rack set inside a large rimmed baking sheet and keep them in a 200°F oven. Top with scallions before serving.

- Peel potatoes and cut into 1/2-inch cubes (there should be about 3 cups). In a large saucepan of boiling salted water parboil potatoes 5 minutes. Drain potatoes and cool. In a skillet heat oil and 1 tablespoon butter over moderately high heat until hot but not smoking and sauté onions, stirring occasionally, until soft and caramelized. Cool onions and in a bowl combine with potatoes, stirring vigorously to partially break up potatoes. Hash browns may be prepared up to this point 1 day ahead and chilled, covered.
- Preheat oven to 350°F.
- In a 10-inch non-stick skillet heat remaining 2 tablespoons butter over moderate heat until foam subsides and cook potato mixture, packing it evenly in skillet with back of spatula to form a cake, until underside is golden, about 10 minutes. Invert a plate or baking sheet without sides over skillet and carefully invert potato cake onto it. Carefully slide potato cake back into skillet and brown other side. On baking sheet bake potato cake 10 minutes.
- Sprinkle hash browns with pepper and salt to taste and cut into wedges.

Taking small handfuls at a time, squeeze all the water from the potatoes and place in a dry medium bowl. Grate onion on the largest hole on a box grater and toss with potatoes. Season with salt and pepper.

Using a spatula, flip sections of the potatoes to crisp on the other side. Flip once or twice more (you don't have to be so careful here; just kind of stir them around) and continue to cook until most of the bits of potato are golden brown and crisped, about another 4 minutes.

HOMEMADE HASH BROWNS WITH SMOKED HAM
Pat: Don't even think about servin' me fried eggs and toast unless they come with a side of crispy, golden hash browns. We make ours with salty browned smoked ham. I've been making them this way for years. My girls love 'em, and if my girls love 'em you know they're good. Sometimes I'll use a food processor to shred the potatoes coarsely; other times I'll cube them and fry them up until they are golden brown and crispy. And if I really want to go overboard, sometimes I'll top each serving with a slice of American cheese.

- Place the diced potatoes in a large pot, cover with water and a generous sprinkling of salt, and bring to a boil. Lower the heat, and simmer until the potatoes are almost tender, 8 to 10 minutes. Drain the potatoes in a colander, and cool slightly.
- Heat the shortening in a large skillet (preferably cast-iron) over high heat. Add the ham, and cook, stirring occasionally, until it begins to brown and crisp, about 3 minutes. Using a slotted metal spatula, turn the potatoes (don't stir them with a wooden spoon or you will mash them), and continue cooking until they are browned, about 4 minutes more. Taste for seasonings and serve immediately, while the potatoes are still hot.

- Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, drain, cool and crumble. Leave bacon fat in skillet and return to stove.
