Steps:

  • Peel potatoes and cut into 1/2-inch cubes (there should be about 3 cups). In a large saucepan of boiling salted water parboil potatoes 5 minutes. Drain potatoes and cool. In a skillet heat oil and 1 tablespoon butter over moderately high heat until hot but not smoking and sauté onions, stirring occasionally, until soft and caramelized. Cool onions and in a bowl combine with potatoes, stirring vigorously to partially break up potatoes. Hash browns may be prepared up to this point 1 day ahead and chilled, covered.
  • Preheat oven to 350°F.
  • In a 10-inch non-stick skillet heat remaining 2 tablespoons butter over moderate heat until foam subsides and cook potato mixture, packing it evenly in skillet with back of spatula to form a cake, until underside is golden, about 10 minutes. Invert a plate or baking sheet without sides over skillet and carefully invert potato cake onto it. Carefully slide potato cake back into skillet and brown other side. On baking sheet bake potato cake 10 minutes.
  • Sprinkle hash browns with pepper and salt to taste and cut into wedges.

1 1/2 pounds russet (baking) potatoes
1/4 cup vegetable oil
3 tablespoons unsalted butter
2 large onions, cut into 1/2-inch dice
freshly ground black pepper to taste

PERFECT HASH BROWNS

When it comes to breakfast potatoes, most people fall into one of two camps: home fries or hash browns. This recipe from Alison Roman shows you how to make an ideal batch of the hashed variety that are aggressively crisp on the outside and creamy tender on the inside. To ensure ultimate crispness, be sure to rinse the grated potatoes with cold water until the water runs nearly clear and to use a very hot, well-seasoned pan. As with all potato dishes, remember to season well.

Steps:

  • Grate potatoes on the largest hole on a box grater into a medium bowl. Cover with cold water and drain; repeat once or twice, until water runs nearly clear. Taking small handfuls at a time, squeeze all the water from the potatoes and place in a dry medium bowl. Grate onion on the largest hole on a box grater and toss with potatoes. Season with salt and pepper.
  • Taking small handfuls at a time, squeeze all water from the potato-onion mixture. Heat 2 tablespoons reserved bacon fat or vegetable oil in skillet over medium heat, add 1 tablespoon butter and swirl together.
  • Add potatoes and onions and spread into a thin, even layer. Cook, without moving, until the potatoes are nearly cooked through and browned on one side, about 5 to 8 minutes. Using a spatula, flip sections of the potatoes to crisp on the other side. Add 1 tablespoon reserved bacon fat or vegetable oil and remaining 1 tablespoon butter and cook, without moving, until potatoes are browned on the other side, about another 5 minutes. Flip once or twice more (you don't have to be so careful here; just kind of stir them around) and continue to cook until most of the bits of potato are golden brown and crisped, about another 4 minutes.
  • Transfer potatoes to a plate. Serve with hot sauce (or ketchup, if you wish).

HOMEMADE HASH BROWNS WITH SMOKED HAM

Pat: Don't even think about servin' me fried eggs and toast unless they come with a side of crispy, golden hash browns. We make ours with salty browned smoked ham. I've been making them this way for years. My girls love 'em, and if my girls love 'em you know they're good. Sometimes I'll use a food processor to shred the potatoes coarsely; other times I'll cube them and fry them up until they are golden brown and crispy. And if I really want to go overboard, sometimes I'll top each serving with a slice of American cheese.

Steps:

  • Place the diced potatoes in a large pot, cover with water and a generous sprinkling of salt, and bring to a boil. Lower the heat, and simmer until the potatoes are almost tender, 8 to 10 minutes. Drain the potatoes in a colander, and cool slightly.
  • Heat the shortening in a large skillet (preferably cast-iron) over high heat. Add the ham, and cook, stirring occasionally, until it begins to brown and crisp, about 3 minutes. Using a slotted spoon, transfer the ham to a plate lined with paper towels to drain. Add the onion to the skillet, and sauté until pale golden, about 3 minutes. Add the potatoes, thyme, the 1/2 teaspoon of salt, the black pepper, and cayenne and cook until the potatoes begin to color and crisp on the bottom, about 4 minutes (shake the pan occasionally, if necessary, to keep the potatoes from burning). Using a slotted metal spatula, turn the potatoes (don't stir them with a wooden spoon or you will mash them), and continue cooking until they are browned, about 4 minutes more. Taste for seasonings and serve immediately, while the potatoes are still hot.

2 1/2 pounds russet (baking) potatoes, peeled and cut into 1/2-inch cubes
1/2 teaspoon kosher salt, plus more for boiling
1/4 cup vegetable shortening
4 ounces smoked ham, diced
1 medium onion, finely chopped
1 teaspoon chopped fresh thyme leaves (or 1/2 teaspoon dried thyme)
1/4 teaspoon freshly ground black pepper
Pinch cayenne pepper
