Steps:

  • Two to three days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.
  • Combine the broth, salt, sugar, peppercorns, allspice and ginger in a large stockpot and bring to a boil over medium-high heat. Stir until the salt and sugar dissolve. Remove from the heat. Cool to room temperature and refrigerate the brine.
  • The night before you'd like to eat: Truss the legs of the turkey with kitchen twine if desired. Combine the brine, water and ice in a 5-gallon bucket. Place the thawed turkey, with innards removed, breast-side down in the brine. If necessary, weigh down the bird to ensure it is fully immersed, cover and refrigerate or place everything in a cooler. Turn the bird once halfway through brining.
  • Day of roasting: Heat the oven to 500 degrees F. Remove the bird from the brine and rinse inside and out with cold water. Discard the brine.
  • Place the bird on a roasting rack inside a half sheet pan and pat dry with paper towels. Rub the bird with canola oil. Roast the bird on the lowest rack of the oven for 30 minutes.
  • While the bird is cooking, fold and shape a double thickness of aluminum foil into a closely fitting breastplate.
  • After 30 minutes, decrease the oven temperature to 350 degrees F, insert a probe thermometer into the thickest part of the breast and cook until the temperature reaches 155 degrees F. Use the breastplate at any point during cooking should the bird become too brown.
  • Rest the bird, covered lightly with aluminum foil, for 15 to 30 minutes. Carve and serve.

No-Baste, No-Bother Roasted Turkey image

Steps:

  • Adjust the oven racks so the covered roasting pan fit easily inside. Preheat the oven to 500 degrees F.
  • Rub the butter on the outside and in the cavity of the turkey. Sprinkle the salt and pepper on the inside and the outside of the turkey. Put the celery, onion and carrot in the cavity. Place the turkey, breast-side up, in a large roasting pan. Pour the boiling water into the pan. Cover with a tight-fitting lid and put the pan in the oven.
  • Start a timer when the oven temperature returns to 500 degrees F. Bake for exactly 1 hour and turn off the oven. Do not open the oven door! Leave the turkey in the oven until the oven completely cools; this may take 4 to 6 hours. Reserve the pan juices and refrigerate the turkey if it will not be served soon after roasting.

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a small saucepan. Add the zest and juice of the lemon and 1 teaspoon of thyme leaves to the butter mixture. Set aside.
  • Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the bunch of thyme, halved lemon, quartered onion, and the garlic. Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.
  • Roast the turkey about 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.
  • Slice the turkey and serve.

A Simply Perfect Roast Turkey image

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
  • Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
  • Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 165 degrees F (75 degrees C), about 4 hours.
  • Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

  • 1. If turkey isn't self basting or otherwise pre-salted, and if you haven't brined it, consider dry brining the night before. You can dry brine for up to 24 hours but just overnight will improve the taste. If you don't brine, just use the spice mixture. About 10 tablespoons will be enough for about a 24 pound turkey. Rub the turkey inside and out with the spice mixture. Put the aromatics in the turkey cavity. Place the turkey in a plastic bag in the refrigerator until time to cook. 2. Preheat the oven to 325 degrees. Plan to cook for about 16 minutes per pound (per 1/2 kg). Always check the internal temperature much earlier than you expect the turkey to be done. 3. Place one onion and all the lemon, and the parsley into the turkey cavity. 4. Brush or spray the turkey all over with oil. Place one onion, both carrots and both celery stalks in the bottom of the roasting pan. Place the turkey breast up on the rack in the roasting pan. 5.Roast the turkey at 325 degree F. (163 degree celsius) oven for about two-thirds of the anticipated cooking time. The turkey should be a light golden brown. 5. Crease aluminum foil then open it up to make a "tent" to place over the breast, not in contact with the breast any more than necessary. Watch the turkey's temperature. It can rise quickly near the end of the cooking time. Check oven safe meat thermometer, beginning earlier than you expect the turkey to be done. Continue cooking until the internal temp of the breast measured half way down is 160 degrees. Check the temperature of the thighs. If they have not reached 155 degrees, cut them from the body and return them to the oven to finish cooking. (Watch the temperature of the thighs closely if you have returned them to the oven.) 6. Cover the turkey loosely with tented aluminum foil. Let rest at least 20 minutes. While resting, the internal temperature will rise 10 degrees to the new USDA recommended internal temp of 165.

SLOW-ROASTED TURKEY

The turkey comes out moist and golden - with no effort on your part. Slow-roasting keeps the juices in. It is nearly impossible to over-bake, because the temperature is so low. The secret is NOT basting or salting. Basting or salting draws out moisture and dries out the turkey. IMPORTANT: Plan ahead: Thaw turkey in refrigerator for 1 day per 4-5 lbs, (For faster thawing, you could thaw in cold water. Change the water frequently.) Allow 1 hour per lb + 1 hour to cook - i.e. total: 21 hours for 20-lb turkey.

When I eat roast turkey, I want a basic recipe, no special herbs or brines. Slow roasted straight up, browned to perfection. Just the way Grandma used to do it when I was a little girl. I begin the stuffing preparation the night before. Don't let the long instructions scare you off, I explained each step for beginner cooks.

Steps:

  • Tear the bread into pieces, and place back into the bags overnight.
  • Dice the onion, and leave covered on the counter.
  • The next day, saute the diced onion in margarine, stir in sage and chicken broth.
  • Place the bread pieces in a large mixing bowl, pour most of the onion mixture onto the bread and stir.
  • The stuffing has enough moisture when you can squeeze a handful, and when opening your hand, the stuffing stays in a loose ball. If it falls apart, add a little more onion mixture.
  • If it is soggy and squeezes together tightly, add a little more bread pieces.
  • If the bird has skin which is binding it's legs together, cut this.
  • Rinse the bird, remove and discard heart, neck etc. and pat the insides to remove some of the moisture.
  • Push the stuffing into the carcass,until you cant' get anymore in, overstuffing the bird as seen in the picture. The tighter you push it in, the moister the stuffing will be.
  • Stuff the neck cavity.
  • If you have leftover stuffing, that is a good thing. Place it in a sprayed crock pot and cook on low for 4-5 hours.
  • Wrap the legs and wings with foil, they will cook quickly.
  • Put a piece of loose foil over the entire bird.
  • Roast at 325°F for about 3 hours.
  • Remove all of the foil, setting it aside and roast for another hour.
  • If the turkey does not have a pop up timer, use a meat thermometer.
  • When done, set the turkey out on the counter and cover loosely with the foil, let it stand 20 minutes for a moist bird.
  • Remove the stuffing from the bird and mix it in with the crock pot stuffing.
  • Carve the turkey and serve on a platter.
  • Enjoy this time honored tradition with your loved ones.
  • You may use more or less sage, according to your tastes.
