TRAIL MIX BARS
These no-bake bars make a yummy snack that the entire family will love! If desired, you can substitute other nut butter for the peanut butter and other nuts and seeds for the sunflower seeds.

Steps:
- Spray a 9x13-inch baking dish with cooking spray.
- Mix crispy rice cereal, oat cereal rings, sunflower seeds, raisins, and chocolate chips together in a large bowl.
- Stir honey and brown sugar in a saucepan, place over high heat, and bring to a boil. Stir and boil for 1 minute. Remove from heat and stir in peanut butter and vanilla extract until smooth and well blended.
- Pour the hot peanut butter mixture into the dry ingredients and stir until all dry ingredients are moistened.
- Press the mixture into the prepared baking dish to make an even layer.
- Let cool and cut into bars.

HIGH-PROTEIN POWER BARS
Our teen son no longer needed his huge container of chocolate protein powder. At my husband's request, I made this power bar recipe. It is a good, quick breakfast or cookie alternative.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Spray a 9-inch square baking pan with cooking spray.
- Stir oats, flour, protein powder, and cinnamon together in a large bowl.
- Mix egg whites, applesauce, olive oil, and peanut butter together in another bowl. Add to the oat mixture and mix well. Fold in chocolate chips and sunflower seeds; batter will be quite thick. Spread into the prepared pan.
- Bake in the preheated oven until golden, about 30 minutes. Remove from the oven and let cool, 20 to 30 minutes. Cut into bars.

BIRD SEED ENERGY BARS
These bars are full of crunchy seeds, wheat germ, and rolled oats for fiber, and protein. Since they keep in the freezer for months, I love to grab them straight from the freezer and pack them for snacks on the ski hill.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x14 inch ovenproof baking dish.
- Mix the rolled oats, brown sugar, wheat germ, cinnamon, and flour together in a large bowl. In a separate bowl, whisk together the eggs, honey, canola oil, vanilla, and salt until evenly blended., and stir into the oat mixture. Stir in the flax seeds, sesame seeds, sunflower seeds, and chocolate chips. Use your hands to mix the ingredients, and press the mixture into the prepared pan.
- Bake in preheated oven until the edges are golden brown, 20 to 25 minutes. Cool completely in the baking dish before cutting into 2 inch bars.

- First, start by lining a 9x9" baking pan with wax paper or parchment paper. You want to cover the pan enough so that there is overhang on the edges of the baking pan. This will ensure that the trail mix energy bars don't stick to the baking pan at all!
- In a large bowl, add in the trail mix, old fashioned oats, all bran and chia seeds. Lightly toss to combine.
- In a small bowl, add in the peanut butter, honey, coconut oil, vanilla extract, salt and cinnamon. Microwave for 30-60 seconds or until the honey is bubbling/foamy. Stir to combine.
- Pour the melted peanut butter and coconut mixture over the dry ingredients and stir using a rubber spatula.
