Tri Colore Salad image

Steps:

  • Combine all 3 lettuces in large bowl and season with salt and pepper, to taste. Whisk the mustard, vinegar, and oil together in a small bowl and season with salt and pepper, to taste. Pour dressing over salad and toss to combine. Top with some shavings of Parmesan.

2 spears endive, washed, dried, and coarsely chopped
1 small head radicchio, washed, dried, and coarsely chopped
About 1/3 pound baby arugula, washed, dried, and thinly chopped
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
3 tablespoon extra-virgin olive oil
Salt and freshly ground pepper
Shaved Parmesan

This creative pan pizza starts with a quick homemade dough. Then it takes inspiration from classic antipasto platters; artichokes, mortadella, and green olives are among the toppings that mingle with zippy marinara sauce and gooey mozzarella cheese.

Antipasto-Platter Pizza image

Steps:

  • Preheat oven to 450°F with a pizza stone or baking sheet set on a rack in lowest position. Drizzle 3 tablespoons oil onto a rimmed quarter-sheet pan (9 by 12 1/2 inches). Stretch dough to edges of pan. Drizzle evenly with remaining 1 tablespoon oil; season with salt and pepper.
  • Spread marinara evenly over dough, leaving a 1/2-inch border. Top evenly with cheese, then mortadella, capocollo, artichoke hearts, olives, and peperoncini. Bake in pan on stone until bubbly and crust is golden brown and set on bottom, 20 to 22 minutes.

1/4 cup extra-virgin olive oil
1 pound Quick and Easy Pizza Dough
Kosher salt and freshly ground pepper
3/4 cup marinara sauce, such as Rao's Homemade
8 ounces low-moisture mozzarella, such as Polly-O, thinly sliced
2 ounces sliced mortadella, cut into 1-inch strips
2 ounces sliced capocollo, cut into 1-inch strips
1/2 cup marinated artichoke hearts, drained and quartered if whole
1/2 cup pitted marinated green olives, halved
1/2 cup pepperoncini, halved

6 tablespoons extra-virgin olive oil

Individual Pizza with Arugula and Tomatoes image

Steps:

  • Preheat oven to 450 degrees, with racks in upper and lower thirds. Divide dough into four equal pieces. Using your hands, stretch each piece into a 5-inch disk.
  • Brush two rimless baking sheets with oil. Place disks of dough on baking sheets; brush dough lightly with oil. Using your hands, crush tomatoes in a bowl; season with salt and pepper. Spread tomatoes on dough; sprinkle with red-pepper flakes. Bake, rotating sheets from top to bottom and front to back halfway through, until crusts are golden, 18 to 20 minutes.
  • Toss arugula with cheese; divide among pizzas. Drizzle with vinegar and oil.

1 pound Quick Basic Pizza Dough, or store bought pizza dough, fresh or frozen (thawed)
Olive oil
1 cup grape or cherry tomatoes
Coarse salt and freshly ground pepper
1/4 teaspoon crushed red-pepper flakes

  • Combine 1 tsp yeast with 1 tsp honey and 3/4 cup warm water in a small bowl. Let sit for 5-10 minutes or until yeast is activated and bubbly.
  • In a separate large bowl, combine 2 cups bread flour with 1/2 tsp salt. Add yeast mixture and 1 tbsp oil and mix until the dough comes together. Transfer to a work surface lightly dusted with flour and knead 2-3 minutes, until smooth. Transfer the dough to a clean bowl, cover with plastic wrap and let proof for 1 hour.
  • Preheat oven to 500 degrees F. Flip a baking sheet upside down and heat in the oven for 10 minutes. Alternatively, preheat a pizza stone.
  • Lightly dust a parchment paper with flour. Divide the dough into two balls. Gently roll out the first portion with your hands into a 10-inch circle. Mix 1 tbsp water with 1 tbsp sugar, stirring until the sugar has dissolved. Brush evenly on the crust and sprinkle parmesan cheese over the entire dough. Carefully transfer the dough to the preheated baking sheet and bake for 8-10 minutes or until golden brown. Repeat with the remaining dough.
