HAWAIIAN PORK TENDERLOIN
Very simple, yet elegant for guests. Kids love how sweet it is. Perfect complements are rice and baked yams.

- Preheat oven to 350 degrees F (175 degrees C).
- Place pork tenderloin in a shallow 9x13-inch; sprinkle with brown sugar, chili powder, garlic powder, and black pepper. Spread pineapple preserves over tenderloin. Arrange onion, orange bell pepper, and red bell pepper on and around tenderloin. Mix reserved juice from mandarin oranges and crushed pineapple in a small bowl; pour in at least 1/2 cup reserved juice.
- Bake in the preheated oven until tenderloin is no longer pink in the center, 45 to 60 minutes. Spoon mandarin oranges and pineapple over tenderloin in the last 20 minutes of cooking. An instant-read thermometer inserted into the thickest part of pork should read at least 145 degrees F (63 degrees C).

SWEET AND SPICY GRILLED PORK TENDERLOIN
This is my absolute favorite marinade for pork tenderloin. It is simple, sweet, warm flavors and a little spice with some red pepper. Just marinade in a large baggie anywhere from 4-8 hours and grill. You can use an indoor grill, but I prefer outdoor.

- Marinade -- In a large baggie add all the ingredients, close and shake well. Add the pork tenderloins and let marinade.
- Grill -- Let set at room temp 20-30 minutes to take the chill off and then grill. After grilling cover and rest 5-10 minutes. Slice and enjoy.

Reserve 1 tablespoon of the spice mixture and use the rest to rub over the pork tenderloin on all sides.
- In a large 12-inch nonstick skillet, heat the oil over medium heat until it is rippling and hot. Add the pork tenderloins in a single layer and cook the pork until browned on all sides, 5-7 minutes total (flipping as needed). Transfer the pork to an aluminum-foil lined baking pan and bake until the meat registers 140 degrees at the thickest part, about 15-18 minutes. Transfer the pork to a platter or plate and tent with foil, letting it rest for 5 minutes before slicing.
- In a bowl, combine the reserved spice mixture, ketchup, vinegar and sugar and brush over the cooked pork. Slice the pork and serve.

- Cut a pork tenderloin into 1/2" rounds and then cut each round into 2-3 strips. The strips should be about 2-3 inches long or roughly the size of your pinky or ring finger.
- Use a paper towel to pat the pork dry before adding the strips of pork to a bowl and toss in the chili oil before adding the ground ginger, garlic powder, salt, and pepper. Toss/stir until evenly coated. Set aside.
- Heat a large skillet over medium-high heat. Once hot, add the pork strips in an even layer. Cook for 3-4 minutes or until there's a small amount of pink remaining in the center. Flip and cook for an additional 1-2 minutes until fully cooked (165ºF internal temp). Transfer the cooked pork to a plate.
