SMOKED MOZZARELLA AND SUN-DRIED TOMATO CIGARS
Steps:
- Preheat the oven to 325 degrees F.
- Lay a sheet of phyllo dough on a clean dry work surface. Use a pastry brush to brush the phyllo sheet with melted butter. Fold the phyllo sheet in half lengthwise, resulting in a 12 by 8-inch rectangle. Brush the top of the phyllo with melted butter. Place a few slices of smoked mozzarella at a narrow end of the phyllo rectangle, leaving 1-inch on each side. Top the cheese with a few pieces of sun-dried tomatoes. Carefully roll up the phyllo dough into a cigar shape starting with the cheese and tomato end. About half way through the rolling, tuck in the 1-inch ends of the phyllo dough, and continue rolling. Place on a foil-lined baking sheet, seam side down, and brush the top with butter. Continue rolling the 5 remaining cigars. Bake until golden, about 25 to 30 minutes.
- Meanwhile, in a small ball jar or in a plastic container with a tight-fitting lid combine the extra-virgin olive oil, Proseco, cider vinegar, salt, and pepper. Shake well. Toss the Proseco vinaigrette with the field greens. Place the dressed greens on a serving platter or on individual serving plates.
- Slice the cigars into 2-inch pieces. Place atop the dressed field greens. Serve immediately.
- The baked cigars are about 1 1/2 inches in diameter. The flavor is great. YUM!!

- Blend first 5 ingredients in processor till tomatoes are coarsely chopped and set dressing aside.
- Cook pasta till tender but still firm to bite, drain, transfer to large bowl.
- Add dressing to hot pasta, toss to coat.
- Cool pasta, stirring occasionally.
- Add fresh tomatoes, mozzarella, basil, parmesan and olives, toss.
- Season to taste with salt and pepper.
- Can be made 6 hours ahead.
- Cover, chill.
- Bring to room temp.
- before serving.

BREAKFAST STRATA WITH SUN-DRIED TOMATOES AND MOZZARELLA
This is a wonderful brunch dish for weekend guests. Make up to 36 hours in advance and refrigerate before baking.

- Butter bottom and sides of 9 x 13" baking dish.
- Spread 3 tablespoons butter over one side of each slice of bread, then cut bread into 1" pieces. Scatter half of bread evenly into prepared dish and sprinkle with half of mozzarella, Parmesan, and tomatoes. Repeat with remaining bread, mozzarell, Parmesan, and tomatoes.
- Whisk together eggs, milk, onion, salt, pepper, mustard, and Tabasco and pour evenly over bread. Press lightly on the bread to submerge. COver tightly with plastic wrap and refrigerate at least 8 hours and up to 36 hours.
- Remove dish from refrigerator and uncover. Preheat oven to 350 degrees. Adjust oven rack ti middle position and heat oven to 350 degrees. Bake until puffed and golden brown, about 1 hour. Serve immediately.

SMOKED MOZZARELLA AND PENNE SALAD
From the Whole Foods Market Cookbook. I buy this at the deli at my local Whole Foods a lot, mostly because if I make it, I will eat it ALL. Much better to walk up to the counter and say "One small cup of the mozzarella and penne, please!" Sometimes I find that the deli combines roasted AND fresh bell peppers, a nice added texture, and I'm not sure that they don't blanch their spinach leaves very quickly, as theirs always seem slightly wilted, although it doesn't call for that here. When I make this, my husband prefers that I use some regular mozzarella along with the smoked (just his personal taste) but I like the smoked. When cutting or grating fresh mozzarella, a useful tip is to pop it in the freezer for a few minutes to firm it up a bit--it will be much more receptive to the advances of your knife when it comes out!

- Cook pasta until al dente. Drain pasta in colander and run under cold water until well-cooled.

- Prepare the dough.
- Preheat oven to 425 degrees. Brush the top of dough with 1 1/2 tablespoons of the oil reserved from the sun-dried tomatoes. Bake for 15 minutes. Remove the dough from the oven and arrange the tomatoes over the top in a pinwheel fashion. Arrange the cheese slices in between the tomatoes. Bake until the cheese is melted and the dough is golden brown, about 5 minutes longer.
