PIRATE PASTA

Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until tender but still firm to the bite, 8 to 10 minutes. Reserve about 1 cup of the cooking water, then drain the pasta. Place the pasta and 1/2 cup cheese in a large bowl and toss until coated.
- In a medium skillet, heat the olive oil over medium-high heat. Add the mushrooms, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring frequently, until the mushrooms begin to brown, 5 to 6 minutes. Add the olives, tomato paste, capers, red pepper flakes, 1 1/2 teaspoons salt, 1/4 teaspoon pepper and the tuna. Using a wooden spoon, break up the tuna into 1-inch pieces. Add the chicken broth and bring the mixture to a boil. Remove the garlic and discard.
- Pour the tuna mixture over the pasta. Add the remaining 1/2 cup cheese and the basil, and toss until coated, using the reserved cooking liquid to loosen the sauce. Season with salt and pepper.
TUNA AND CHEESE PIRATE SHIPS
I remember a long time ago looking in a cookbook my mom had (for fun kid meals) where they made pirate ships out of the sandwiches. These are probably nothing like that, but that old recipe was my inspiration for a twist on tuna sandwiches that had my kids clapping their hands with glee.

- Open tuna; drain.
- In small bowl, mix tuna, miracle whip, and relish (or prepare tuna using your favorite method.).
- Cut crusts off of bread and cut each piece in quarters. Spread tuna on one piece and put another piece on top for each mini-sandwich.
- Fold and tear one slice of cheese to make four squares. Skewer each piece of cheese on a toothpick as pictured and stick into sandwich to make the ship.
- Two pieces of bread and one piece of cheese makes 4 pirate ships.

- In a bowl, combine the tuna, egg, celery and onion. Stir in the Miracle Whip and pickle relish; set aside. Make a 2-in. wide V-shaped cut in the center of each bun to within an inch of the bottom. Remove cut portion and save for another use. Line each bun with a lettuce leaf and fill with tuna mixture., Cut cheese slices in half diagonally. For sails, carefully insert a wooden skewer into the top center of each cheese triangle. Bend cheese slightly; push skewer through bottom center of cheese. Insert two skewers into each sandwich. Place on a serving plate. Sprinkle fish crackers around boats.
