TUNA MEATBALLS
One day I didn´t have any kind of meat at home, but I saw two cans of tuna on the shelf and said to myself: if I cook other kind of meatballs why not make tuna meatballs. I cooked them, my kids and husband loved them since then, and I still cooking them. It is very easy, I hope you like it!

Steps:
- Open the cans of tuna and drain them completely.
- Put the tuna in a medium bowl and mix.
- Add 1/2 cup of breadcrumbs and mix.
- Add butter and salt, mix.
- Add egg, mix.
- Add the other 1/2 cup of breadcrumbs and mix well.
- Add milk little by little until moistened, not too sticky.
- Make the meatballs with your hands and fry in hot oil in medium heat until golden, not too brown.

SPAGHETTI AND TUNA MEATBALLS
Tuna meatballs is a new one for me but it sounds interesting and I am always up for making comfort food more healthy. I found this recipe in the Autumn 2008 copy of BBC Easy Cook magazine. The recipe states that the meatballs can be frozen.

Steps:
- Flake the tuna into a bowl.
- Tip in the pine nuts, lemon zest, parsley, breadcrumbs and egg.
- Season and mix together with your hands until completely combined.
- Roll the mix into 12 walnut-sized balls.
- Put a large pan of water on to boil, then cook the spaghetti according to the pack instructions.
- Heat a little of the reserved tuna oil in a large non-stick frying pan. Then fry the tuna balls for 5 minutes, turning every minute or so until completely golden.
- Drain on kitchen paper.
- Heat the spaghetti sauce and then toss together with the pasta and tuna balls.

- Peel and finely chop the onion. Wash and chop the mint leaves. Grate the lemon zest. Chop the pine nuts.
- Put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring tothe boil again. Cook the pasta al dente according to the instructions on the packet.

- Chop the tuna into 1/2 inch pieces. Put the tuna, mint, pistachios and the chopped onion in a food processor and pulse to combine. You want a rough mixture, not a smooth paste. Put the tuna mixture into a large bowl with the breadcrumbs, salt, lemon zest and egg and mix well with your clean hands for a minute or so. You want everything combined well and you want the proteins in the egg and tuna to bind the mixture.
- Using an ice cream scoop or large spoon to scoop out the meat, roll into meatballs. You should be able to make about 20 golf ball-sized meatballs. Roll each meatball in flour and fry in enough olive oil to come half way up the sides of a large frying pan. You will probably need about 1/2 cup. Fry gently until browned over medium heat, about 15 to 20 minutes, and set each finished meatball on paper towels to drain.
- To finish, stew the meatballs in the tomato sauce (you can use any tomato sauce you want, if you'd rather not make the tomato-fennel sauce ) until heated through, about 5 to 10 minutes, and serve alone or with pasta.

- Working in three batches; place the tuna, pine nuts, parsley and onions in a food processor and pulse about 8 to 10 times to combine, but not puree. Transfer the mixture to a large bowl and add the eggs, breadcrumbs, salt + pepper and lemon zest. Gently mix with your hands to combine well.
- Use an ice cream scoop to portion the meatballs, then form with your hands and place on a parchment lined sheet pan. You should get about 20 to 25 meatballs, depending on the size of your scoop.
- Heat 1/2" canola oil in a frying pan until it is 350 degrees. Fry 6-8 meatballs at a time until browned on each side and cooked through, about 15 minutes. Place on a paper towel lined sheet pan to drain off any excess oil.
