TUNA RING WITH CHEESE SAUCE
This is from my mother's Betty Crocker Recipe Card Library from the 70's. I've been enjoying it for 3 decades! It's so delicious, and not as hard as the recipe is lengthy. It makes even a novice cook look pretty darn impressive!

Steps:
- Filling: Beat egg slightly; set aside 2 T egg.
- Stir tuna, onion, cheese, parsley, celery salt, and pepper into remaining egg.
- (You can do this part ahead and keep in refrigerator until ready to use.) Dough: Stir baking mix& water to a soft dough.
- Knead 5 times on a floured cloth covered board.
- (I just do this on a floured surface.) Roll out into a rectangle.
- Spread with filling.
- Roll up to make a long roll.
- Place sealed edge down on greased baking sheet.
- (I make a circle or a half-circle.) With scissors, make cuts 2/3 deep at 1"-2" intervals.
- (I slightly turn each piece to show filling.) Brush top with reserved egg.
- Bake at 375F for 25-30 minutes.
- Meanwhile, make cheese sauce.
- Cheese Sauce: Melt butter over low heat.
- Blend in baking mix, salt, and pepper.
- Cook over low heat, stirring, until smooth and bubbly.
- Remove from heat.
- Stir in milk.
- Heat to boiling, stirring constantly.
- Boil and stir one minute.
- Stir in cheese until melted.
- (I rarely bring this to a boil. I just make sure it's nice and hot, bringing the heat up slowly. Maybe it's my own quirk, but I don't scorch the milk that way. I slice the tuna ring and serve the slices and pass the cheese sauce. This is so yummy!).

- Preheat oven to 375°. Unroll crescent dough and separate into triangles. On an ungreased 12-in. pizza pan, arrange triangles in a ring with points toward the outside and wide ends overlapping. Press overlapping dough to seal., In a small bowl, combine the remaining ingredients. Spoon across wide end of triangles. Fold pointed end of triangles over filling, tucking points under to form a ring (filling will be visible)., Bake 15-20 minutes or until golden brown and heated through.

With sealed edge down, shape into ring on greased baking sheet; pinch ends together. With scissors or sharp knife, make cuts 2/3 of the way through ring at 1 inch intervals. Turn each section on its side to show filling. brush top with reserved egg. Bake 25-30 minutes Serve with hot cheese sauce. Recipe follows for sauce. Cheese Sauce directions Melt butter over low heat: Blend in baking mix, slat, pepper, Cook over low heat, stirring until smooth and bubbly. Remove from heat;, stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. stir in cheese until melted.
RING AROUND THE TUNA SALAD
This is an old recipe from The Joy of Jello cookbook back in the late sixties or early seventies. My kids like it in the summer and I sometimes served it as a side for family gatherings and potlucks.

- 1. Dissolve jello and salt in boiling water
- 2. Add cold water, vinegar and onion. Chill until very thick but not set. Stir in remaining ingredients and pour into mold or individual serving cups
- 3. Chill until firm. I usually make this up the night before. Unmold onto crisp lettuce. You can top with additional tuna or mayo.
TUNA BISCUIT RING
This is one of my favorite recipes, using Albacore tuna,celery, mushroom soup, blue cheese, peas, and served with a cheese sauce. A great presentation - I often serve this during Lenten season too- it is so good my family asks for it!!

- 1. Beat egg slightly; stir in tuna, onion, cheese, parsley, celery salt and pepper, 1/2 can undiluted soup and peas into egg. Set aside. Combine baking mix and water to a soft dough; knead 6 times on floured board. Roll into rectangle, 15x10-inches. Spread with tuna mixture. Roll up, beginning at long side. With sealed edge down, shape into ring on the greased jelly roll pan; pinch ends together. With scissors, make cuts 2/3 of the way through ring at 1-inch intervals. Turn each cut section on its side to show filling. Spray top with buttery non stick baking spray. Bake in 375^ for 25 to 30 minutes. Serve with hot cheese sauce. --- Cheese Sauce: Melt butter over low heat; blend in baking mix, salt and pepper. Cook stirring until smooth and bubbly. Remove from heat; stir in milk, soup and peas. Heat to boiling. stirring constantly for 1 minute. Stir in cheese until melted. Serve with each slice of the tuna ring. --- Note: Chopped cooked chicken, hamburger, scrambled eggs and ham, or vegetables may be substituted for the tuna, if desired. Makes a great breakfast, lunch or dinner entrée. Can be made Mexican style with hamburger,spices and cheese; or pizza style with seasonings and pepper jack cheese. You get the idea, endless combinations.
NANA'S TUNA RING WITH CHEESE SAUCE
Steps:
- Preheat oven to 350°F. Start by mixing 2 cups of Bisquick and 1/2 cup of milk to make a firm dough. Roll the dough into an oval shape about a half a centimeter thick.
- In a bowl mix the tuna, egg, half a bag of cheese, and parsley. Scoop the tuna onto the dough and spread it into a fist sized line across the middle of the oval (long-ways). Fold the dough over the tuna and shape it into a ring, closing the ends together. Starting about one inch from the middle of the ring, cut about every 2 inches to the outside. After the ring is cut, turn each cut piece alternating left and right (heart shapes).
- Place in oven on cookie sheet for 45 min to an hour or until dough is cooked. While this is in the oven. Make the cheese sauce.
- In a pan bring 2 cups of milk to a boil. Gradually pour in 1/2 cup of Bisquick and a whole bag of cheese. STIR STIR STIR until sauce is creamy. Serve Tuna Ring topped with the cheese sauce with your favorite veggies.

TUNA CRESCENT ROLLS
Steps:
- Preheat oven to 350 degrees.
- 1. Unroll crescent rolls.
- 2. In a medium bowl drain and flake tuna fish.
- 3. Add 1 cup of shredded cheese, onion, and 4-5 tablespoons cream of mushroom soup. Mix well
- 4. Scoop tuna mixture by heaping spoonfuls onto unrolled crescent rolls.
- 5. Re-roll crescents starting with the largest end rolling to the small end.
- 6. Grease an 8x8 in pan. Place the rolled crescents side by side.
- 7. Place in oven and cook 10-12 min or until lightly browned.
- 8. In a small saucepan add the remaining soup, cheese and a little bit of milk to thin the consistency.
- 9. Cook over medium heat until thick and bubbly.
- 10. Serve the soup mixture over crescent rolls. Enjoy!

AUNT BONNIE'S RING MACARONI TUNA SALAD
This was a staple at my Aunt Bonnie's barbeques, but the recipe probably originated from the back of a Creamettes box in the 1960's. In Minnesota, we obviously use Creamettes Macaroni Rings. You can use anellini pasta for this recipe. Cooking time does not include refrigerating time.
