Ground turkey makes a great burger. It makes an even better one with feta cheese and kalamata olives. Serve these tasty treats with sun-ripened tomatoes and Greek-style pita.

- Preheat the grill for medium high heat.
- In a large bowl, combine turkey, feta cheese, olives, oregano, and pepper. Mix together, and form into patties.
- Lightly oil the grate. Place patties on the grill. Cook for 10 to 12 minutes, turning halfway through.

SPINACH AND FETA TURKEY BURGERS
These are a big hit in the summertime when everyone is tired of the same old hamburgers and hot dogs. Serve with or without buns and your favorite condiments. I like to serve these with lettuce, tomato, and Tzatziki sauce (you can find recipes for that on this site as well).

- Preheat an outdoor grill for medium-high heat and lightly oil grate.
- While the grill is preheating, mix together eggs, garlic, feta cheese, spinach, and turkey in a large bowl until well combined; form into 8 patties.
- Cook on preheated grill until no longer pink in the center, 15 to 20 minutes.

GRILLED TURKEY BURGERS WITH TZATZIKI AND FETA
Steps:
- For the turkey burgers: Preheat a grill or grill pan over medium-high heat until hot. Clean and oil the grates.
- Place the turkey, salt, pepper, feta and scallions in a medium bowl. Mix with your hands until combined. Form into 5 football-shaped patties.
- Grill the patties until the internal temperature reaches 165 degrees F, 5 to 6 minutes per side. Remove the patties to a plate.
- While the turkey patties cook, make the tzatziki sauce: Stir together all of the ingredients in a small bowl. Taste and adjust for seasoning, if necessary. Refrigerate until ready to serve, up to 3 days.
- Lightly grill the pitas, 1 to 2 minutes per side.
- To assemble: Cut the grilled pita pockets in half. On each of the bottom halves, place 4 to 5 avocado slices, then a turkey patty. Dollop with a generous amount of the tzatziki. Top with a couple of the lettuce leaves. Close the burgers and serve warm.

- Mix all of the ingredients for the turkey burgers, bar the olive oil, together in a large bowl. Season with a generous amount of black pepper and a little salt (you won't need a lot because of the feta). Shape into 4 burgers, the mixture will be quite sticky so cover and chill in the fridge for 15 mins or until needed to firm up a little. At this point the burgers can also be frozen.
- Preheat the grill to its highest setting then brush the burgers on both sides with the olive oil. Transfer the burgers to a non-stick baking tray and cook for 8-10 mins on each side, until cooked through and golden brown.
- While the burgers are cooking, mix together the olive oil, lemon juice and some seasoning. Add the rocket and tomatoes to a large salad bowl, add half the dressing and toss well to combine. Serve alongside the turkey burgers and with the extra dressing on the side.

- Spray grill pan with cooking spray; heat on medium-high heat. Add peach slices; grill 2 min. on each side. Reserve 6 peach slices; finely chop remaining peach slices.
- Mix turkey, cheese, onions, cilantro and chopped peaches just until blended; shape into 6 (1/2-inch-thick) patties. Make small indentation in center of each patty with your thumb. Refrigerate 30 min.
- Heat grill to medium heat. Grill patties 6 to 7 min. on each side or until done (165ºF).
- Place burgers on bottom halves of buns; top with barbecue sauce, peach slices and arugula. Cover with tops of buns.

- Gently mix together the ground turkey, feta crumbles, chopped basil, worcestershire sauce, salt, and pepper with your fingertips. Make sure not to overwork the meat, but rather to think of distributing the ingredients evenly.
- Form the meat mixture into 4 patties, keeping in mind that the burger will shrink up during cooking. For this reason, I usually make them flatter than I ultimately want, and a little bit wider than the bun. Don’t make the patties too thick or they’ll take too long to cook.
- To cook on the stove, heat up a cast iron skillet over medium high heat for a couple minutes. Once the pan is hot, add the turkey patties and cook for about 3 minutes on each side. Time will vary depending on how hot your pan is and how thick your patties are, but you want the center of the turkey burger to read at 165 degrees F. If you find that the burgers are browning too much before the interior is cooking through, you can put a lid on the pan, or pop the burgers into a hot oven for a few minutes to finish cooking.
- You may also grill the burgers either on an indoor or outdoor grill. About 3 minutes on each side as well, depending on how intense the heat is. Check for doneness using a thermometer, aiming for 165F.
