Chicken Yakitori image

Steps:

  • Special equipment: 6-inch wooden skewers, soaked in cold water for at least 1 hour
  • Whisk together the radish puree, mirin, sake, oil, soy and hot sauce in a large bowl. Add the chicken and toss to coat. Cover and refrigerate for at least 2 and up to 8 hours.
  • Preheat a charcoal grill or kamado-style ceramic charcoal cooker for direct grilling over high heat.
  • Using 2 skewers for each chicken thigh, thread the edges of the meat onto the skewers. Sprinkle with salt and pepper. Grill until charred and cooked through, about 6 minutes per side. Transfer to a cutting board.
  • Whisk together the oil, rice vinegar, soy, lime juice and sugar in a large bowl and season with pepper. Pour some over the mizuna, toss to coat and mound in a large shallow serving bowl. Toss the noodles with the remaining dressing and mound in the center of the mizuna.
  • Cut the chicken thighs in half down the middle between the skewers to make kebabs. Arrange the skewers spoke-like around the mizuna, chicken toward the center, drizzle with additional hot sauce and serve.

  • In small bowl dissolve bouillon in boiling water. In gallon size, self closing plastic bag, combine bouillon, soy sauce, sherry, ginger, garlic, and turkey strips. Close bag and shake mixture to coat. Refrigerate 4 hours or overnight. Drain marinade; discard. On skewers weave turkey strips around mushrooms and red and green pepper cubes. Preheat charcoal grill for direct heat cooking. Grill skewers 4-5 minutes or until turkey is no longer pink. If desired, prepare another recipe of marinade by combining first six ingredients to use for brushing on grilled skewers and as dipping sauce. DO NOT use any of original marinade as a dipping sauce when serving.

YAKITORI MARINADE

This is a simple yakitori recipe. Use it with boneless, skinless chicken thighs and leeks on skewers on the grill. I had never heard of this food until I first went to Japan. It's the equivalent to hot dog carts here in the states. You can get it everywhere from street vendors. Yakitori has become more popular here in the states over the last five years. I've even seen it in the frozen food section. It's easy to make if you have a grill though.

  • In a medium bowl, stir together the soy sauce, honey and sake. Mix in the pressed garlic, if using. Use as a marinade and/or a basting sauce while grilling chicken.

Turkey Yakitori Burgers With Sweet-Soy Glaze image

Steps:

  • GLAZE: In a small saucepan bring the Mirin, soy sauce, maple syrup, brown sugar, ginger & lemon juice to a boil. Mix the cornstarch & water together to dissolve the cornstarch. Stir into the boiling mixture. Let boil for about 15 minutes, until thickened. Set aside to cool. Once cooled mix 1 tabelspoon of the glaze into the mayonnaise & set aside to top the burgers.
  • BURGERS: Mix all the burger ingredients together with your hands & form into two patties. Grill over medium-high heat for 3 minutes per side. Brush with glaze & flip. Grill 2 more minutes. Brush with glaze & flip again cooking 2 more minutes.
  • When the burgers have about 5 minutes left put the onions on the grill & brush them with the glaze. Grill until they are soft.
  • Brush both the burgers & onions with glaze once more before serving.
  • Serve the burgers on rolls topped with the mayonnaise & lettuce. The onions can be eaten on the side or on the burgers.
