FRESH PEAR BREAD

When our tree branches are loaded with ripe and juicy fruit, I treat my family and friends to lots of easy pear recipes. I always receive raves and requests for this particular pear bread recipe because of the mix of fun ingredients.-Linda Patrick, Houston, Texas

Steps:

  • In a bowl, combine the eggs, sugar, oil and vanilla; mix well. Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture just until moistened. Toss pears with lemon juice. Stir pears and walnuts into batter (batter will be thick). , Spoon into 2 greased 9x5-in. loaf pans. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Turkish Coffee Pear Bread image

Steps:

  • Peel and core the pears. Cut them into quarter pieces.
  • Puree the quarters in a food processor to get 1 1/4 to 1 1/2 cups.
  • Center a rack in the middle of an oven preheated to 325°F.
  • Lightly grease and flour a 9-by-5-inch loaf pan.
  • Sift together the flour, baking soda and salt into a small bowl; set aside.
  • In the bowl of an electric mixer on medium speed, combine the butter and sugars until well blended, about 2 minutes.
  • Reduce the speed to low and add the eggs and vanilla extract, mixing for about 1 minute.
  • Add the pear puree and yogurt. Mix until combined.
  • Stop mixing. Sprinkle the ground coffee and cardamom over the batter, then scatter the flour over the top.
  • Resume at low speed or pulse a few times, and mix until just combined.
  • Transfer the batter to the loaf pan and bake for about 1 hour 5 mins., or until a toothpick inserted in the center comes out clean.
  • Cool for 10 minutes in the pan, then invert onto a wire rack and turn right side up on the rack to cool completely.

  • With a pastry blender, cut in butter until mixture resembles coarse crumbs.

Spiced Anjou Pear Bread image

Steps:

  • Preheat oven to 350F (I baked at 325F convection).
  • Generously grease two large (9X5-inch) loaf pans--the long pieces of pear make the loaves more susceptible to sticking in the pans and falling apart, so make sure you grease generously. (I lined the bottom and sides with a long piece of greased waxed paper, leaving enough extra at the sides to lift the loaf out of the pan.).
  • In a large bowl, combine brown sugar, vegetable oil, molasses, and eggs; mix in salt, baking soda, cinnamon, ginger, cloves, and allspice.
  • Stir the pear slices in, coating them evenly; stir in the flour.
  • Pour batter into prepared loaf pans.
  • Bake for 50-65 minutes (I baked mine right around 60 minutes).
  • Allow loaves to cool in pan about ten minutes before removing them and placing them on a wire rack to cool.
  • Note: I halved the recipe, making one loaf, and used 1 whole egg and 1 egg white.

TURKISH COFFEE - KAHVE

Growing up with parents who were born in Cyprus (Turkish Speaking). I was basically taught how to make Turkish Coffee which is called Kahve at a young age (well old enough to safely be around flames from the stove). Kahve is traditionally prepared in a small long handled pot narrowing on at the top this is called cazve. Kahve is ideally made one cup at a time and served in a small espresso cup. Measurements for one cup is equal to one espresso size cup about 90 mls/3 oz. There are different varieties of Kahve with four listed below.

Steps:

  • Place one espresso size cup of cold water or milk (Depending upon the variety chosen from above) into cazve/very small pot.
  • Add one teaspoon of powdered Turkish Coffee into the cazve/very small pot.
  • Add sugar if desired depending which variety you wish to drink.
  • Stir and heat on stove immediately, coffee will rise, remove from heat and add one spoon of froth into serving cup.
  • Return pot to heat and cook until coffee rises again. This could be done once or three times in total each time spoon froth into serving cup. Once the three repetitions are complete, add the rest of the coffee from the pot into the serving cup.
  • Good kahve has a creamy foam floating on top. (Similar to the crema found atop good espresso coffee but with a great deal more body).
  • Do not drink grounds on the bottom of the cup.

You can buy freshly roasted and prepared coffee beans while you wait Turkish coffee from most middle eastern grocers in the united states. They usually use a combo blend of light and dark coffee beans and grind cardamom up in it at the same time.You can even purchase Turkish coffee pots that Turkish coffee is made in at most grocers. If you don't have a Turkish coffee pot, don't worry, you can use any pot. This recipe is the next best thing.*Measurements are approximate, so you may add or decrease according to taste buds*

Turkish Coffee....kah'wah image

Steps:

  • Place water and sugar in a large enough pot to boil the water.
  • Make sure you allow room, because boiling coffee tends to want to boil up and over.
  • Once boil is achieved, add coffee, very slowly, and decrease heat.
  • Stir coffee very frequently.
  • When making it, I let it comes to a boil and when it starts to boil up the pot I take it off the burner for 2 seconds, then repeat the steps 3-4 times.
  • Serve in demitasse cups.
  • *Do not leave coffee boiling on stove unattended, it WILL boil over*.
  • *If serving for a large group, just double or triple the recipe accordingly*.
