Steps:

  • Preheat oven to 350 degrees. Place the chicken breasts in an ungreased 9x13 glass baking dish. Put the sliced onion and zucchini around the chicken. Sprinkle seasonings over the chicken and vegetables. Pour the tomato sauce and diced tomato over the top.
  • Bake for 30-35 minutes or until the chicken is cooked through. Periodically baste the chicken with the pan juices so the tomato sauce doesn't dry out on top.
  • Remove the chicken and vegetables to individual plates or a platter and toss either pasta or rice with the tomato sauce before serving.

  • Flatten chicken to 1/2-in. thickness; sprinkle with salt and pepper., In a large skillet over medium heat, cook and stir the garlic, rosemary, sage and thyme in oil for 1 minute. Add chicken; cook for 5-6 minutes on each side or until chicken juices run clear.

  • Spray a 9X13 or larger baking dish with nonstick cooking spray. Bring a large pot of salted water to a boil and cook pasta to al dente according to package directions. Drain when finished cooking.
  • Meanwhile, in a large deep skillet, heat 1 tablespoon of reserved sun dried tomato oil (or olive oil) and add chicken and onions. Saute until chicken is cooked through and onions are translucent, stirring occasionally, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Add kale and sundried tomatoes and cook until kale is wilted, stirring frequently. Add cream cheese, milk, and Parmesan cheese. Stir to combine and cook until cream cheese is melted and incorporated. Add pasta and stir to coat pasta with all other ingredients. Pour into prepared baking dish and top with mozzarella cheese.

  • Preheat oven to 350°F. Bring a large pot of heavily salted water to the boil and cook pasta per package instructions. Drain and set aside.
  • Season the chicken with salt and pepper, set aside. Over medium high heat add the olive oil to a large skillet and brown the chicken on both sides for 4-5 minutes total. Remove from pan and set aside.
  • Add the garlic to the pan and sauté for a minute. Add the chopped sun dried tomatoes, heavy cream, chicken broth, Italian seasoning, red pepper flakes and stir. Bring to a boil and cook for 2 minutes. Add the parmesan cheese and stir. Reduce heat to simmer and cook for 2 minutes.
  • Add the spinach, cooked pasta and chopped cooked chicken to the sauce. Toss to mix and cook for 2 minutes more. Season to taste and turn off the heat.
