EASY FISH TACOS WITH CILANTRO-LIME DRESSING
Easy fish tacos, grilled with an awesome marinade and great cilantro lime dressing. Use Asian slaw (from Wegmans), fresh salsa, and avocado to dress.

- Combine oil, vinegar, lime juice, lime zest, honey, garlic, seafood seasoning, cumin, chili powder, and black pepper in a nonreactive bowl or large resealable zip-top bag. Add mahi mahi and marinate for 8 hours, or overnight.
- At the same time, combine yogurt, lime juice, and cilantro for dressing in a bowl. Chill overnight while fish marinates.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Remove mahi mahi from marinade and place on a grill pan; discard excess marinade. Cook until fish flakes easily with a fork, turning as needed, about 5 minutes.
- Serve fish on warmed tortillas with dressing.

CILANTRO LIME MARINADE
This marinade is great for grilled chicken but you could try it with pork or fish also.

- 1. Place marinade ingredients in a blender and puree until smooth. Add marinade and chicken to a large Ziploc bag. Refrigerate for 6-8 hours, turning occasionally. Remove chicken and discard marinade. Grill over medium heat for 5-7 minutes on each side.
- 2. These are the wraps I made with the grilled chicken. I sliced the breasts, topped them with a black bean and corn salsa, and spooned a cumin sour cream sauce on top. Wrapped it all up in a flour tortilla. Yum!

This is a good one for those of us who love lime, since that is the predominant flavor here. Use cod, flounder, or any firm white fish for this. - Combine all the ingredients in a food processor for less than one minute or until the texture is nice and chunky. Be sure the garlic is fully processed. If you don't have a food processor you can make the marinade by dicing the cilantro, jalapenos and garlic very lightly and then mix the ingredients in a bowl with a fork.
- For a less spicy version, remove the inside of the jalapeno and wash it under cold water and be sure not to get any of it in your eyes. Store the marinade in the fridge for up to one week.

- In a small food processor, pulse together the cilantro, lime zest and juice, garlic, olive oil, salt, black pepper, and red pepper flakes. Add additional olive oil as necessary until you reach a smooth sauce consistency.
- Place the salmon portions in a gallon sized zip top bag. Add the marinade to the bag, press out any excess air and seal. Place in the refrigerator for 1-2 hours (not any longer.)
- When ready to cook, prepare your grill for indirect cooking at medium heat. Your target temperature in your grill should be around 375 to 400 degrees F.
- Remove the salmon from the marinade and place on your grill, skin side down. Use a spoon to spread any additional marinade on top of the salmon. Grill for 8-10 minutes (without flipping) or until the salmon is done. Your salmon is finished when the flesh is opaque and flakes easily with a fork.
