Ugandan Smoked Fish Stew image

Steps:

  • Cook the onions and garlic in oil until translucent.
  • Add the diced tomatoes, and cook until soft.
  • Stir in tomato paste, curry powder and dill.
  • Allow the mixture to simmer for 5-10 minutes. Add a bit of water if it becomes too thick.
  • Add the smoked fish at the last minute, just cooking it long enough to warm.
  • Garnish with a sprinkle of dill. Serve over rice or Pasta.

3 tablespoons tomato paste

1 teaspoon curry powder
1 pinch dill
1 medium sized smoked fish fillet (without bones, shredded or cut into cubes)

A friend saw this being created on a TV cookery show and decided to do it for me, it is just so tasty I had to post it, please please try this dish if you don't you'll never know how good this really is!

Moroccan Fish Stew image

Steps:

  • Heat the olive oil in a large heavy-based pan over a medium heat.
  • Add the onion and cook, stirring occasionally, for five minutes, or until the onion is translucent.
  • Add the garlic, ginger, cumin, turmeric and cinnamon stick and cook for two minutes, stirring regularly.
  • Add the cayenne pepper, tomatoes, salt and 250ml/9oz of water and cook, stirring frequently, for ten minutes.
  • Add the fish and simmer for five minutes, or until the fish is almost cooked and tender.
  • Add the chickpeas and honey and cook for a further 2-3 minutes, then season, to taste, with salt and freshly ground black pepper.
  • To serve, spoon out the stew into bowls and garnish with fresh coriander leaves and flaked almonds.

Steps:

  • Cut fish into 1 in pieces. Soak 1 hour in a brine solution made of 8 cups water and 1/2 cup salt. Drain fish. Combine 3 cups water, tomatoes, garlic,sugar,1 teaspoon salt,celery salt,and a dash of cayenne. Cover and simmer 20 minutes. Add remaning ingredients. Bring to a boil, cook just to heat vegetables. Add Fish. Pack into hot jars, leaving 1 inch head space. Adjust lids. Process in pressure canner, at 10 pounds, pints and quarts 100 minutes.
