Ukrainian Red Beans With Plum Sauce image

Steps:

  • If using canned beans, drain and place in a sieve or strainer and rinse under cold water. Drain again and place in a serving bowl.
  • In a blender or food processor, place garlic, salt, basil, coriander, jam and vinegar; puree until very smooth. Using a wooden spoon, fold puree gently into beans. Let stand for 2 to 3 hours at room temperature; sprinkle with parsley just before serving.
  • Serve in a large bowl or on a platter lined with lettuce. Makes 8 servings.
  • NOTE: This can be prepared a day ahead and kept in the refrigerator overnight. Allow salad to come to room temperature before serving.

3 cups cooked red kidney beans or 2 (14 ounce) cans red kidney beans
1/2 garlic clove
1/2 teaspoon salt
1/2 teaspoon dried sweet basil leaves
1/4 teaspoon powdered coriander
3/4 cup damson plum jam
1 tablespoon wine vinegar
1 tablespoon chopped fresh parsley

RUSHIN' RUSSIAN RED BEANS

I first came across the idea of red kidney beans in damson sauce in Rose Elliot's "The Bean Book". I've since discovered that Rose's recipe is based on a Russian dish called Lobio. I've made a few tweaks to Rose's recipe, including making it more 'instant' by using canned kidney beans. Traditionally you're supposed to serve this dish cold, but we can rarely manage to wait that long (I did say "rushin") so I serve it hot as a main dish, over baked potatoes; usually with salad and coleslaw. If you can wait, this is lovely served cold as intended. I use my own home made jam in this recipe (Damson Jam Recipe #139722) but if you can't find damson jam, plum jam can be substituted (warning: plum jam is sweeter so I suggest starting off with a smaller amount and adding to taste). Serves 2 as a main dish, 4 as a side dish.

Rushin' Russian Red Beans image

Steps:

  • Put the jam, vinegar, garlic, basil and coriander in a saucepan; cook gently over a low heat until the jam has melted.
  • Empty the contents of the can (including the water) into the damson sauce mixture and bring to the boil.
  • Cook on a low to medium heat for about 5-8 minutes until the liquid has reduced to a good saucey consistency (not too runny, not too thick!): season with a pinch of salt and good grind of black pepper.
  • Serve hot or cold: your choice.

Steps:

  • Place the soaked beans in a medium saucepan with 1 quart of cold water and the Bouquet Garni. Bring to a boil, then reduce the heat and simmer until the beans are tender but not mushy, about 1 hour. After the beans have simmered for 30 minutes, heat the olive oil in a large skillet over medium heat. Add the onion and poblano and cook, stirring, for about 5 minutes. Add the garlic and cook for 2 more minutes, then transfer the vegetables to the saucepan with beans and stir in the tomato puree, chipotle, and chile powder. (If using canned beans, rinse them and place in a medium saucepan with 1 cup of water and the sautéed ingredients, chipotle, chile powder, and tomato puree). If your beans start looking dry (they should be submerged and moist throughout the simmering), add a little more water. Cook for about 15 more minutes, and when the beans and vegetables are very soft, season to taste with salt and pepper. Drain them, reserving the liquid, and cool. Place the beans in a blender with the cilantro, lime juice, and a cup of the cooking liquid. Puree them, adding more liquid as necessary to make a smooth, viscous sauce (the consistency of pancake batter). You may need to do this in two batches. Pour the sauce into a pot and keep warm until ready to use. If necessary, you can add a little water.

Bouquet Garni (p. 145) made with bay leaf, cilantro stems, and 1-inch piece of cinnamon stick
2 tablespoons olive oil
1 small onion, chopped
1 small poblano pepper, stemmed, seeded, and chopped
2 garlic cloves, minced
1 cup tomato puree, made from fresh or canned tomatoes
1 chipotle chile canned in adobo sauce, split lengthwise and seeded
1 teaspoon chile powder
Salt and pepper
1/2 bunch cilantro, cleaned and roughly chopped
Juice of 1/2 lime (about 2 tablespoons)
