ULTIMATE DECADENT MUFFINS

This muffin has carrots, apples, coconut, nuts, pineapple, raisins. It is a really moist muffin as it has cream cheese and sour cream. It is truly decadent.

Ultimate Decadent Muffins image

Steps:

  • Preheat oven to 340 F degrees.
  • Mix all the first 13 ingredients together.
  • Beat the eggs, butter, cream cheese, sour cream and vanilla together with mixer.
  • Stir the flour mixture with the butter mixture. Mix well.
  • Spoon into well greased muffin tin.
  • Bake at 340 F or until toothpick test is completed.

2 1/2 cups flour
2 1/2 cups brown sugar
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
2 cups carrots, grated
1 cup golden raisin
1/2 cup walnuts (or your favorite nuts)
1 cup coconut
1 apple, which has been peeled and chopped
1 (8 ounce) can crushed pineapple (drained)
4 eggs
1 cup of melted butter
8 ounces cream cheese (softened)
1 cup sour cream
3 teaspoons vanilla

Ultimate Banana Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
  • Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
  • Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
  • Divide batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.
