UNCLE TOMMY'S BAKED BEANS

I have a dear friend in Louisiana who's Uncle Tommy experiments with recipes in his garage. He set up a little cooking area with a stove and counters. He's a good ole' boy who feels he should keep his cooking fantasies (other than BBQing), a secret from the rest of the guys he knows. This is his recipe for just about the best...

Steps:

  • 1. In a large cast iron frying pan, cook bacon on med high until fat appears in pan. Add onions.Cook both together until onions are browned. Bacon is semi crisp. Set aside.
  • 2. In a large stew pot on medium heat add Bush's baked beans, OR (if your iron skillet is big enough drain the bacon fat, leave the onions and bacon in the pan. Add the remaining ingredients). Stir in onions and bacon and the rest of the ingredients.
  • 3. Increase to medium/high heat. Bring to a gentle boil. Stirring occasionally so the beans don't stick and the flavors blend. Reduce heat back to medium for remaining 10 minutes.
  • 4. Serve um up! Uncle Tommy would want you to really enjoy his Baked Beans! He always served them with laughter.

1/2 lb bacon (cut into small pieces)
1/2 large sweet onion chopped
55 oz bush's baked beans (original)
1 1/2 tsp yellow mustard
12 oz chili sauce (bottled)
1/2 c jack daniels
1 tsp instant coffee powder
12 oz crushed pineapple
1/4 c brown sugar

Steps:

  • Rinse beans until water comes out clean, removing any "bad" looking beans.
  • Soak beans covered in water at least 5 hours or overnight in a large pan.
  • Boil in same water with 3/4 of salt pork (cut up either in chunks or slices).
  • Bring pot to a boil with the salt pork. Reduce heat to medium, and simmer 1 1/2 hrs till tender. (However tender the beans are going into the pot is how they will be in the end).
  • In a heavy baking pan sprayed with Pam, add beans, salt pork, salt (add contemporary additions if desired). Cover with water used to boil the beans. Add rest of salt pork in slices on the top.
  • Bake at 200°F for 8 hours.
  • Add water used from boiling when stirring to prevent sticking and for a moist bean. My family however, did not stir the beans, they just added the water every 30-s60 minute.
