SPICY CRANBERRY SALSA

Spicy Cranberry Salsa image

Steps:

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste. Chop 1 cup raw cranberries in a food processor and add to cranberry sauce. Stir in 1 thinly sliced jalapeno, 1 tablespoon lime juice and 1 teaspoon each honey and salt. Let cool to room temperature. Just before serving, add 2 tablespoons chopped cilantro.

CRANBERRY SAUCE SALSA

Don't toss that little bit of cranberry sauce leftover from Thanksgiving dinner. This recipe, which we developed for a special kids' edition of The New York Times, calls for making it into a savory-sweet salsa that everyone will love. Just add some chopped fresh tomatoes, onion, garlic, cilantro and jalapeño to prepared whole cranberry sauce (not the jellied stuff). Stir in some lime zest and juice, and a sprinkling of chile powder, cumin and cayenne. Serve with enchilada pie or tortilla chips, and consider stocking canned cranberry sauce in your cabinet all year long.

Uncle Bill's Special Cranberry Sauce image

Steps:

  • Wash the cranberries thoroughly in cold water. If using frozen cranberries, thaw first.
  • In a medium size saucepan, add cranberries, orange juice, water, sugar, orange-pineapple marmalade, cinnamon stick, nutmeg, lemon zest and orange zest.
  • Bring mixture to boil.
  • Reduce heat and simmer for about 10 minutes or until most of the cranberries pop, stirring occasionally.
  • When cooked, discard cinnamon stick.
  • Let cool and then store in a glass container with lid or a dish covered with plastic wrap.
  • Keep refrigerated.
  • Use as required.
  • NOTE: If desired, add 1 1/2 ounces of Light Bacardi Rum when cooking the sauce.
  • This is for ADULTS only who accept liquor.
  • This gives the cranberry sauce a whole new taste. This is YUM, YUMMY good.

Steps:

  • Rinse cranberries in cold water.
  • In a food processor, add cranberries, apple, red pepper and onion and pulse until coarsely chopped.
  • Transfer to a mixing bowl and set aside.
  • In a separate mixing bowl, stir together sugar, apple juice, cilantro, Jalapeno pepper and lime zest; mix well to blend.
  • Add this mixture to the cranberry mixture and mix well to blend.
  • Spoon into jars with a cover and refrigerate.
  • To prepare Tortillas:.
  • Heat oven to 375°F.
  • Using a tree-shaped cookie cutter, cut 6 trees from each tortilla, or cut the tortillas into wedges.
  • Place cut tortilla on an ungreased cookie sheets.
  • Bake in preheated 375 F oven for 8 minutes or until crisp.
  • You may also place the cut tortillas on parchment paper and microwave on HIGH (full power) for 1 1/2 to 2 minutes or until nice and crisp.
  • Store tortilla chips in a plastic bag.
  • Serve cranberry salsa with tortilla chips.
  • Frozen cranberries can also be used to make the salsa.

Steps:

  • Place the cranberry sauce, cilantro, lime zest, lime juice, jalapeno pepper, onion, red pepper, green pepper, tomatoes, and salt, and pepper, to taste in a food processor and pulse until blended, but still chunky. Serve with Turkey Taquitos.
  • Sweat the onion, garlic, and jalapeno in a saute pan with 1 tablespoon of vegetable oil. Remove from the heat and add to a large bowl. To the bowl, add the shredded turkey, cheese, tomatoes and season with salt, and pepper, to taste. Mix the ingredients thoroughly.
  • Warm the tortillas in the microwave for 10 seconds so they are pliable.
  • Fill the tortillas with a tablespoon of filling and roll into a thin taquito, securing with a toothpick. Keep the taquitos covered with a damp towel before cooking otherwise the corn tortillas will dry out and crack. Heat 2 cups oil in a straight-sided pan to 350 degrees F. Place the taquitos in the hot oil in batches and shallow fry until crisp, rolling to cook all sides, about 3 minutes.
  • Drain the taquitos on paper towels and salt. Remove the toothpicks before serving.

1/2 cup canned whole cranberry sauce
1/4 cup chopped fresh cilantro leaves
Zest and juice of 1 lime
1 jalapeno, coarsely chopped
1/2 white onion coarsely chopped, covered and microwaved for 1 minute
1/4 cup diced red bell pepper

Steps:

  • Rinse halibut steaks in cold water, then pat dry on paper towels.
  • In a bowl, whisk eggs, add mustard and whisk until blended.
  • In a shallow dish, combine garlic powder, dill weed, crushed cornflakes, parmesan cheese, and Italian seasonings; mix well to blend.
  • Dip halibut steaks in egg mixture.
  • Now place halibut steaks individually in dry mixture and coal both sides well.
  • BAKING.
  • Preheat oven to 450°F.
  • In a 13 x 9 inch oven-proof casserole dish add olive oil and butter.
  • Place dish in heated oven until butter melts.
  • Place coated steaks in casserole dish in a single layer.
  • Bake in preheated 450 F oven for 5 minutes, then turn over and continue to bake for another 5 minutes or until fish flakes when tested with a fork.
  • DO NOT OVERCOOK halibut steaks.
  • FRYING.
  • In a large frying pan, melt butter with olive oil on medium high heat.
  • Add steaks and fry for 5 minutes on each side or until fish flakes when tested with a fork.
  • DO NOT OVERCOOK halibut steaks.
  • Serve with with a nice homemade tartar sauce.

1 teaspoon Dijon mustard
1/2 teaspoon granulated garlic powder
1 teaspoon dried dill weed
1/3 cup crushed corn flakes

Steps:

  • In a large saucepan, combine prepared mango, onions, sweet red pepper, Jalapeno peppers, coriander, garlic and vinegar.
  • Grate lime rinds and squeeze juice from both limes and add to saucepan.
  • Add sugr and mix well.
  • Place saucepan over high heat and bring to a full rolling boil and boil for 1 minute, stirring constantly.
  • Remove from heat.
  • Immediately stir in liquid pectin.
  • Stir for 5 minutes.
  • Remove any foam to prevent fruit from floating.
  • Prepare canning jars by sterilizing with soap and hot water, rinsing with clean hot water.
  • Place jars in oven and heat for 15 minutes at 300 degrees F.
  • Fill hot jars to within 1/4" from rim with mixture.
  • Prepare canning lids in hot water.
  • Carefully clean tops of rims and place lids, then screw tops and tighten just finger tight.
  • Place jars on a towel and cover with another towel to cool.
  • Jars are sealed when lids"pop" and are concave (turned down).
  • Label jars and store in a cool dark place.

My friend Val shared this recipe with me last year. It is a new favorite, and one that I plan on taking many places over the holiday season, as it is different. Best served with Wheat Thins, this salsa is yummy and a must try! The original recipe called for a 1 pound package of cranberries; I've found that fresh cranberries are now packaged in 12 oz. portions, and this size works. Don't forget to allow time for chilling, to allow flavors to develop...This will make enough for 2 blocks of cream cheese, so you have 1 to serve, and 1 to share!

  • Wash and rinse cranberries well in cold water.
  • In a large heavy bottom saucepan, combine all ingredients.
  • Bring to a boil over medium heat, about 10 to 15 minutes, stirring constantly.
  • Reduce heat and simmer, uncovered for 20 to 25 minutes or until slightly thickened, stirring frequently.
  • Prepare 7- 1/2 pint jars by washing with soap and hot water.
  • Rinse well with clean hot water.
  • Preheat oven to 300 degrees F.
  • Place clean jars upside down on oven rack and heat for at least 15 minutes.
  • Ladle hot chutney into hot jars, leaving 1/2" headspace.
  • Wipe rims clean.
  • Apply lids according to manufacturer's directions.
  • Apply screw tops just finger tight.
  • Place jars on a towel and cover with another towel until cooled.
  • Jars are sealed when you hear each jar"pop", and lids should be concave (depressed down.) Label jars and store in a cool, dry place.

  • BASE Preheat oven to 325 F.
  • Butter a 13" x 9" oven-proof baking dish.
  • In a food processor or blender, pulse flour, sugar, salt and butter and whirl until crumbly.
  • Spread into prepared baking dish and pat down lightly.
  • Bake uncovered in preheated 325 F oven for 20 minutes.
  • Scatter cranberries over warm baked base.
  • Sprinkle over with shredded coconut.
  • In a medium-size mixing bowl, whisk together eggs, sugar and lemon juice until well blended.
  • Gradually whisk in flour and baking powder.
  • Pour lemon mixture over top (it will spread to fill dish during baking).
  • Bake uncovered in preheated 325 F oven for about 55 to 60 minutes or until middle is set and edges are golden.
  • Cool before cutting.
  • Cut into 3" x 1 1/2" squares.
  • Store in an airtight container at room temperature for up to 4 days or you may freeze the squares.
