EASY CABBAGE ROLL CASSEROLE
Forget trying to roll the cabbage rolls. I tried this once and realized that I didn't need to spend all that time making the rolls because they ended up looking the same on the plate anyways.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease an 8x12-inch baking dish.
- Heat vegetable oil in a large skillet over medium-high heat; cook and stir ground beef until crumbly, evenly browned, and no longer pink, 8 to 10 minutes. Drain and discard any excess grease. Stir in onions, water, tomato sauce, garlic, salt and black pepper; bring to a simmer. Add rice, cover, and cook for 10 minutes.
- Spread half the shredded cabbage in prepared baking dish; cover with half the beef mixture. Repeat layers. Arrange bacon over final layer of beef. Cover baking dish with aluminum foil.
- Bake in preheated oven until bacon is crisp and cabbage is tender, about 1 1/2 hours.

- Place the cabbage in a greased 2-1/2-qt. baking dish. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the rice, salt if desired and pepper; spoon over cabbage. , Combine soup and water; pour over beef mixture. Cover and bake at 350° for 40-50 minutes or until rice and cabbage are tender. Uncover; sprinkle with cheese. Bake 5-10 minutes longer or until the cheese is melted.

UNSTUFFED CABBAGE ROLL
This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.

- In a large skillet, combine sauce ingredients. Bring to a boil; reduce heat and simmer. , Meanwhile, in a large bowl, combine the rice, Worcestershire sauce, salt and pepper. Steps:
- Brown meat in a skillet with cooking spray.
- Spray and 8 by 8 dish with cooking spray.
- Layer cabbage on bottom of dish.
- Cover with onion, brown meat and rice.
- Combine tomatoes, mustard, brown sugar twin and salt and lemon pepper.
- Pour over mixture in the dish.
- Cover and bake at 350 degrees Fahrenheit for 1-1/2 hours.
- Uncover and bake additional 10 minutes.
UNROLLED CABBAGE CASSEROLE

- Preheat your oven to 350ºF.
- Bring a large pot of salted water to a simmer. Core and cut the cabbage into very thin slices. Toss the cabbage into the water and let cook until soft, about 10 minutes. Strain the water from the cabbage and toss lightly with a bit of salt.
- Meanwhile, brown the beef and pork and add in the spices. Once the meat is done, remove from the heat and set aside.
- For the sauce, open the tomatoes and mix the sugar and spices directly into the jar/bottle/can. No need to dirty up a bowl.
- For the assembly, get out a high-sided casserole dish. Place a layer of cooked cabbage on the bottom, then add a layer of meat, then a layer of tomato sauce. Continue layering until everything is used up.
- Depending on how deep your casserole dish is, you'll bake for about 1 to 1½ hours...until the cabbage is completely cooked through, the sides are a bit bubbly and the top tomato layers has turned a tad crusty (in a good way!).
- This dish needs to rest for about 30 minutes before digging in, as the liquid that was expelled will reabsorb while resting.
UNSTUFFED CABBAGE ROLL CASSEROLE
From a free Penzey's recipe card... Edited 3/24/08 to add that I have now made this recipe for the first time. We really liked it, but found it a bit bland, so I doubled the amounts of vinegar and brown sugar and also added some ketchup to jazz it up a bit. Definitely a keeper, though!

- In a large skillet, brown the ground meat and drain off any grease. Add the chopped onion and cook for about 3 minutes, until the onions are softened.
- Add the cabbage and water and cook for about 5 minutes, or until the cabbage starts to wilt.
- Add the tomatoes, brown sugar, vinegar, salt, caraway seed and garlic. Bring to a boil, reduce heat and cover.
- Simmer until the cabbage is cooked to the desired tenderness, about 30 minutes. Serve with white rice.
