POPOVER PIZZA CASSEROLE
This easy, in-the-oven-in-ten minutes ground beef casserole is topped with cheese and a popover-like topping.

Steps:
- Heat oven to 425°.
- Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in pizza sauce. Heat to boiling; reduce heat to low and keep warm.
- Beat eggs, milk, oil, flour and salt with wire whisk until foamy. Spoon beef mixture into ungreased rectangular baking dish, 13x9x2 inches. Sprinkle with cheese. Pour egg mixture over cheese. Sprinkle with onions.
- Bake uncovered 25 to 30 minutes or until puffy and golden brown. Serve immediately.

- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in sauce, mushrooms, and olives. Cook and stir until heated through, about 2 minutes more. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mozzarella cheese on top of the casserole.
- Flatten each biscuit with your hands and arrange on top of the cheese.
- Bake in the preheated oven until biscuits are golden, 15 to 17 minutes.

- Heat oven to 350°F. In 12-inch skillet, cook beef, onion and bell pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
- Stir in pizza sauce, pepperoni and olives; heat until hot. Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
- In medium bowl, stir Bisquick mix, milk and eggs until blended. Pour evenly over pepperoni mixture.
- Bake uncovered about 25 minutes or until crust is light brown. Sprinkle with cheese. Bake uncovered about 5 minutes longer or until cheese is melted.

This is a great brunch alternative. The popover batter replaces the pizza crust. If you're craving pizza this is a simpler alternative and the upside-down puffy crust is a nice change of pace. Recipe from My Great Recipes (1988 or 1989). Feel free to substitute ground beef or turkey for sausage and add salt, pepper, or any other seasonings you prefer.

- Add onion and green pepper. Cook for a few minutes.
- Stir in flour, basil, marjoram, and tomato sauce.

- Preheat the oven to 375°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray.
- In a large skillet over medium-high heat, brown the ground beef with the pepper and onion. Once the meat is cooked through and browned, add the garlic. Cook for an additional minute or so. Drain the excess grease away. Return the meat mixture to the skillet or a large bowl. Add the pepperoni, olives, and sauce. Stir to combine. Pour the meat mixture evenly into the prepared dish. Sprinkle the cheese evenly over the meat mixture. Open the crescent rolls, but do not separate them. Lay the dough, in one sheet, on top of the cheese. Pinch the seems together and then carefully stretch the dough to cover the top of the casserole. Brush with the melted butter, then sprinkle with the Parmesan cheese and Italian seasoning.
- Bake for 20 to 30 minutes or until the crust is deep golden brown. Allow to rest for about 5 minutes before serving.
