VALENTINO'S PIZZA CRUST

My Great grandmother worked at the original Valentino's Pizza Place in Lincoln, Ne. She was nearly 80 and her job was to put the sauce on the pizza. Today, it is a chain of restaurants, buffet style. I still remember what it was like to be in the back of that busy kitchen!

Steps:

  • Stir hot water, sugar and dry yeast until blended.
  • Add oil, salt and flour.
  • Stir until mixture forms a soft ball.
  • Let rest 5 minutes.
  • Roll out on a pizza stone.
  • Top with your favorite pizza sauce and toppings.
  • Bake 400* 15 minutes or until golden brown.

1 cup hot water
1 teaspoon sugar
1 package dry yeast (2 1/4 tsp.)
3 tablespoons oil
1/2 teaspoon salt
2 1/2 cups flour
pizza sauce, of choice
pizza toppings, of your choice

Steps:

  • 1. Stir water, sugar and yeast together until dissolved. Add the olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10 minutes. 2. Pat dough into pan or on to a pizza stone using fingers dipped in olive oil. If desired sprinkle basil, thyme or other seasonings on crust. Top with your favorite pizza toppings and bake for 15 to 20 minutes in a preheated 425 degree oven.

Steps:

  • Mix dough ingredients well; knead 8-10 minutes; rise 1-2 hours. Mix sauce ingredients in saucepan; simmer and cool. Bake at 400 degrees about 20 minutes or until golden brown.

Dough: 1 package yeast
1 1/2 C water
2 T sugar
4 T olive oil
2 t salt
4 C flour
Sauce: 1-8 oz can tomato sauce
1-8 oz can tomato paste
1/8 t thyme
1 clove garlic, crushed
1/4 t rosemary
1 bay leaf
1/4 t oregano
1/4 t caraway seeds
1/2 C water (optional)
Meat: choice is yours (precooked)
Cheese: 1/3 TO 1/2 lb mozzarella and monterry jack
