VEGAN APPLE PIE
This holiday beauty proves just how delicious special-diet desserts can taste. The pate brisee for this pie is made with safflower oil, not butter, so vegans can dig in.

- Preheat oven to 400 degrees. On a lightly floured surface, roll out one disk of dough into a 13-inch round, about 1/8 inch thick. Fit into a 9-inch pie dish. Trim edge flush with rim. Roll out second disk to a 13-inch round.
- In a large bowl, toss together apples, lemon juice, cane sugar, cinnamon, salt, and flour. Transfer apple mixture to pie shell, brush edge with water, and place second dough round on top. Tuck edge of top dough under bottom dough to seal; crimp as desired. Cut a few steam vents in top dough. Lightly brush top with water and sprinkle with turbinado sugar.
- Place pie dish on a rimmed baking sheet and bake until crust begins to turn golden brown, about 20 minutes. Reduce temperature to 350 degrees and bake until browned on top and juices are bubbling in center, 60 to 70 minutes. Let cool completely on a wire rack before slicing and serving.
VEGAN APPLE PIE RECIPE BY TASTY

Steps:
- Make the crust: In a large bowl, combine the flour, sugar, and salt.
- Add the cubed butter, a bit at a time, and use a fork to work it into the flour with a fork until it breaks down to dime-sized pieces.
- Gradually add the ice water and mix just until the dough can be pressed together.
- Divide the dough in half and shape into discs. Wrap in plastic wrap and chill in the fridge for 1 hour.
- Preheat the oven to 350˚F (180˚C).
- Make the filling: Peel and core apples, then thinly slice. Transfer to a large bowl and add 2 cups (200 G) of sugar, the lemon zest, cornstarch, lemon juice, 1 teaspoon melted coconut oil, salt, and 3 teaspoons cinnamon. Toss until the apples are well-coated. Set aside.
- On a lightly floured surface, roll out both of the discs of dough to about 1 inch (2 cm) thick. Transfer one round to a greased 8-inch (20-cm) pie dish and gently press against the bottom and sides. Trim the excess dough around the edges, then prick the bottom of the pie crust all over with a fork
- Pour the apples into the bottom crust and cover with the top crust. Trim the excess dough around the edges, then crimp the top and bottom crusts together with a fork. Brush the top of the crust with the remaining tablespoon of melted coconut oil and sprinkle with the remaining teaspoon of sugar and cinnamon. Cut 4 vents in the top crust
- Bake for 1 hour, until crust is starting to turn golden brown.
- Let cool for 10 minutes, then slice and serve.

VEGAN APPLE PIE
This recipe came from "How it all Vegan" and it turned out beatifully. When I made this pie, I made two pie crusts in order to have enough to make a lattice for the top. It was oh so pretty! I found that the wheat flour thickens up the filling--the first time I made this pie, it was very liquidy, but still yummy. Enjoy and happy cooking.

- Preheat oven to 350.
- Prepare apples.
- Boil water in a large pot and add apples and raisins.
- Turn down heat to medium and simmer apples and raisins for 10 minutes or until soft.
- Save 1/4 cup of water used for cooking apples for later use.
- Drain apples and place in large bowl.
- Mix apples with maple syrup, cinnamon, and lemon juice.
- Set aside.
- In a saucepan, add"applewater" and corn starch.
- Stir continuously until mixture is thick, then add to apple mix.
- Lastly, add whole wheat flour to mixture.
- Stir well and carefully.
- Pour final mixture into the pie crust and bake on 350 for 30 minutes, or until brown.

- Prepare the crust first by mixing the salt into the fresh pastry flour, then adding the butter substitute. Sprinkle the barley flour over this mixture, slightly mix, and add enough water to make a thick ball of dough (between three and four tablespoons). Quickly roll out between two sheets of wax paper or on a board used for pie crusts.
- Shape the dough into a 12-inch circle and place into a lightly greased glass or ceramic pie pan. Crimp the edges at the top of the pan. Prick the bottom and sides of the pie crust lightly with a fork so the crust will not puff up and let the liquid from the pie filling go under it. Store in the refrigerator while you make the filling.
- While the crust chills, combine the apples, 1/3 cup of the apple juice and the raisins and bring to a boil. Cover and simmer 15 minutes. Mix in the cinnamon and lemon juice.
- Preheat oven to 350. Remove from heat and allow to cool. Combine the thickener and remaining 1 cup of apple juice, stir until dissolved and bring to a boil. Simmer about 1 minute or until transparent and thickened. Spoon the apples into the crust and pour the thickened mixture over them. Bake for about 40 minutes.

Steps:
- Sift flour into a large bowl. Rub in butter with your fingers until mixture resembles fine crumbs. Stir in sugar, vanilla, cold water, and baking powder until a firm dough forms.
- Knead dough gently and briefly on a floured work surface. Wrap in plastic wrap and let chill, about 30 minutes.
- Place apples in a pot and cover with water. Bring to a boil; reduce heat and simmer gently until soft, 15 to 20 minutes. Drain. Mash with a hand blender or potato masher into a thick puree; let cool.
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch pie plate.
- Press 2/3 of the dough into the pie plate evenly with your fingers to make the crust. Prick crust all over with a fork.
- Bake crust in the preheated oven until golden, about 20 minutes.
- Grate remaining 1/3 of the dough onto a baking sheet to make crumbles.
- Bake crumbles in the preheated oven until golden, about 10 minutes. Reduce oven temperature to 200 degrees F (95 degrees C).
- Place aquafaba and cream of tartar in the bowl of a stand mixer fitted with a whisk attachment. Beat on high, gradually adding confectioners' sugar, until meringue is stiff and glossy, 10 to 15 minutes.
- Measure out 1 1/4 cup apple puree into a bowl. Stir in cinnamon. Spread apple-cinnamon puree over cooled pie crust. Spread meringue over the puree.
- Bake pie in the preheated oven until golden, 60 to 90 minutes. Turn off oven; keep pie inside until cooled, 45 minutes to 1 hour.
- Scatter baked crumbles on top.
