VEGAN ZUCCHINI BREAD MUFFINS

Modified an old recipe and cut 1/2 the sugar and oil. Still trying to reduce sugar content.

Vegan Zucchini Bread Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 muffin pans.
  • Whisk warm water and flaxseed together in a large bowl. Mix in sugar, applesauce, oil, and vanilla extract. Stir in zucchini until well combined.
  • Sift oat flour, all-purpose flour, baking powder, cinnamon, nutmeg, salt, and baking soda into a bowl. Stir in raisins and combine with the zucchini mixture until batter is just mixed.
  • Transfer batter into muffin cups using 1/4 cup measure.
  • Bake in the preheated oven until a knife inserted into a muffin comes out clean, 50 to 55 minutes.

2 teaspoons ground nutmeg
1 teaspoon salt
½ teaspoon baking soda

Vegan Zucchini Banana Bread Muffins image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease or line 24 muffin cups with paper liners.
  • Combine zucchini, bananas, applesauce, brown sugar, oil, lemon juice, and vanilla extract together in a large bowl. Whisk flour, baking soda, 1 tablespoon cinnamon, nutmeg, baking powder, salt, and cloves together in a separate bowl. Slowly add flour mixture to zucchini mixture while continuously stirring until batter is just combined. Spoon batter into prepared muffin cups about 3/4-full.
  • Mix white sugar and 1 teaspoon cinnamon together in a small bowl; sprinkle over batter.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 30 minutes.

VEGAN ZUCCHINI BREAD WITH SOURDOUGH DISCARD

Another recipe to use up all the extra sourdough discard I seem to hoard in my refrigerator. Light tasting, with just enough spice to keep it interesting, and vegan! Double the recipe to enjoy one loaf now and freeze the second for later.

Vegan Zucchini Bread with Sourdough Discard image

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9x5-inch loaf pan.
  • Whisk flour, baking soda, cinnamon, ginger, and nutmeg together in a bowl until well combined.
  • Stir sourdough discard in a second bowl. Let sit until bubbles start to form, about 5 minutes.
  • Meanwhile, place grated zucchini in a third bowl. Sprinkle with salt and toss to combine. Let sit for 5 minutes.
  • Gently squeeze small handfuls of zucchini over the sink to drain any liquid. Transfer zucchini to a large mixing bowl and add mashed banana, brown sugar, and oil. Whisk until zucchini is evenly distributed and no lumps of brown sugar remain. Stir in sourdough discard until evenly distributed. Add flour mixture gradually, stirring until just incorporated. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 55 to 60 minutes. Remove from the oven and let cool in the pan for 5 minutes. Transfer loaf to a wire rack and cool completely before slicing, about 30 minutes.
