Steps:
- Place navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight.
- Drain navy beans and put into a pot with 5 cups water.
- Bring water to a boil; reduce heat and simmer until beans are tender, about 1 hour.
- Preheat oven to 250 degrees F (120 degrees C).
- Combine beans, onion, brown sugar, molasses, vinegar, mustard, garlic, nutmeg, and cinnamon in a 2-quart casserole dish with a lid; season with pepper. Place lid on dish.
- Bake in the preheated oven, 5 to 7 hours, stirring halfway through and adding water if mixture is too dry. Remove lid and bake until mixture has reduced to desired thickness, about 1 hour more.

- Place kidney beans in a large saucepan. Cover with water and soak for 8 hours, or overnight.
- Drain water from kidney beans. Pour in fresh water to cover by 1-inch; add 1 teaspoon salt.
- Cook beans over low heat for 2 hours. Remove from heat; drain excess water from pan until it just covers beans.
- Stir in tomato paste, brown sugar, vinegar, cornmeal, remaining 1 teaspoon salt, cumin, hot paprika, and ginger to beans. Mix well.
- Cook bean mixture over low heat for 2 hours. Stir to loosen any beans on the bottom of the pan. Continue to cook over low heat until bean mixture has reduced and thickened, about 2 hours more.

- Preheat the oven to 350 degrees F (175 degrees C).
- Heat oil in a large skillet over medium-high heat. Add onion and jalapeno. Cook until onion is soft and translucent, about 5 minutes. Add garlic and cook for 1 minute. Add bourbon and simmer for 4 minutes. Turn heat off.
- Combine tomato paste, maple syrup, molasses, vinegar, soy sauce, mustard, and paprika in a large bowl; whisk until smooth. Add onion mixture and beans; gently stir to combine.
- Transfer to a baking dish. Cover and cook for 35 minutes. Uncover and cook for 15 more minutes. Remove from the oven and let sit for 5 minutes before serving.

This is a great alternative to 'traditional' baked beans, in that it has a heavy load of vegetables and no meat. Of course, you can use real bacon, if you're not vegetarian. - Melt butter in a large saucepan over medium-high heat. Add onion, carrots, bell pepper, and garlic. Sprinkle lightly with salt and saute until onion is soft and translucent, about 5 minutes. Add tomatoes, barbeque sauce, molasses, bacon bits, rum, dill, and mustard and stir to combine. Reduce heat and simmer sauce 20 to 30 minutes.
- Preheat the oven to 325 degrees F (165 degrees C).
- Pour 1/4 cup beans into a bowl and mash. Pour remaining beans into a casserole dish. Mix mashed beans into the saucepan with the sauce and pour mixture over beans in the casserole dish. Cover with a lid or aluminum foil.
- Bake in the preheated oven for 2 1/2 hours. Uncover and bake 30 minutes more. Let cool for 20 minutes before serving.

- Preheat the oven to 325 degrees F.
- Place the dried mushrooms in a medium bowl and cover with 2 cups boiling water, make sure each mushroom is submerged. Let steep for 10 minutes. Strain through a fine-mesh strainer, reserving the liquid. Roughly chop the steeped mushrooms and set aside.
- Heat the olive oil in an ovenproof heavy-bottomed pot or Dutch oven over medium-high heat. Add the onions, bell peppers and chopped mushrooms and cook, stirring often, until the vegetables are slightly softened, 3 to 4 minutes. Reduce the heat to medium and add the garlic, chili powder, smoked paprika and cayenne and cook, stirring, until fragrant, about 1 minute.
- Add the tomato puree, bourbon, molasses, brown sugar, Worcestershire sauce, mustard, 2 teaspoons salt and 1/4 teaspoon pepper, bring to a simmer and cook to combine, about 3 minutes. Add the beans, vegetable broth and reserved mushroom liquid. Raise the heat to high, bring to a boil and cook for 10 minutes. Cover the pot, transfer to the oven and bake until the beans are tender, about 3 hours.
- Uncover and increase the oven temperature to 350 degrees F. Bake until the sauce thickens and the beans on top begin to brown, about 30 minutes.

- Preheat the oven to 350ºF (180ºC).
- In a large saucepan, heat the olive oil over medium heat. Once the oil begins to shimmer, add the onion and cook for 4-5 minutes, until semi-translucent.
- Add the garlic and cook for another 2-3 minutes, until fragrant.
- Add the paprika, chili powder, mustard powder, salt, and pepper and cook for 2 more minutes, until the spices are fragrant.
- Add the tomato paste, maple syrup, molasses, soy sauce, apple cider vinegar, and liquid smoke and stir for 1-2 minutes, until well-combined.
- Then, add the vegetable broth and stir until smooth, about 1 minute.
- Add the beans and stir for 1-2 minutes, until evenly coated.
- Cover and bake for 40 minutes, until the beans are bubbling. Uncover and bake for another 10 minutes, or until desired consistency is reached.
- Stir well and serve.

- Coat the bottom of a skillet (use a medium, oven-safe skillet if you've got one) with oil and place over medium-low heat. Add onion and toss a few times to coat. Allow to cook, flipping occasionally, until onion is very soft and caramelized, 30-40 minutes. Add garlic. Cook until very fragrant, about 1 minute more.
- The whiskey goes in next, but before adding it, check to make sure the heat is still set at medium low. If there is any sizzling in the pan, lower the heat until it subsides. Alcohol vapors are flammable, and adding whiskey to a pan that's too hot could result in ignition. Keep a lid handy and use it to put out any flames. Now slowly begin adding the whiskey. Stir it in and raise the heat to medium to bring it to a simmer. Allow to cook until most of the liquid has cooked off, about 4 minutes. Remove from heat.
- Preheat oven to 350°F. Stir tomato paste, Worchestershire sauce, molasses, apple cider vinegar, soy sauce, mustard, paprika and liquid smoke together in a small bowl. Stir in 1/4 cup maple syrup, taste test and add up to 1/4 cup more. If you used a non oven-safe skillet to caramelize the onions, transfer them to an oven-safe dish (an 8 inch x 8 inch baking dish works). Otherwise, leave them in the oven-safe skillet. Add beans and maple syrup mixture. Stir a few times to mix everything up. Season with salt and pepper to taste.
