Steps:
- Heat oven to 350ºF.
- Heat oil in large skillet on medium-high heat. Add onions; cook 5 min. or until crisp-tender, stirring frequently. Stir in garlic; cook 1 min. Add water, potatoes and carrots; cover. Cook 10 min.; stir in zucchini. Cook, covered, 5 min. or until all vegetables are tender. Stir in tomato sauce and seasonings; simmer 3 min.
- Spoon into chiles; place in shallow baking dish. Cover.
- Bake 20 min. Top with cheese; bake; uncovered, 5 min. or until melted.

ROSARITA VEGETARIAN CHILE (CHILE) RELLENO BAKE
I found this on the Rosarita Vegetarian Refried Beans can that was destined for boring burritos. I love Chile Rellenos at Mexican restaurants. While I've never duplicated Chile Rellenos at home, I have tried the casserole version. Let's just say that they were less than stellar and took more work than I wanted do. I added a layer of chopped onions about 1/4 of a large onion since it was prepared for the burrito, plus a layer of salsa verde (medium heat) since my husband loves the heat. Although the ingredients call for Pepper Jack, I prefer Monterey Jack. This makes a great meatless meal in barely any time.

Steps:
- Preheat oven to 375°F.
- Spray 8 x 8-inch glass baking dish with cooking spray.
- Beat egg whites in small bowl until stiff peaks form.
- Whisk egg yolks in separate bowl; fold into egg whites.
- Add Flour into eggs until just combined.
- Fold in green chilies.
- Spread beans over bottom of dish.
- Layer chopped onions over beans and make sure to get sides.
- Spread layer of salsa verde, smoothing into the sides. OR.
- Mix all the beans, onions and salsa verde together.
- Top with half of the egg mixture, spreading evenly.
- Sprinkle with half of the cheese, then remaining egg mixture and remaining cheese.
- Bake, uncovered, 30 minutes or until golden brown.

Posted in response to a request. Since traditional Chiles Rellenos are cooked in the corn husk and good ones are not always available to all people all the time am posting a variation using phyllo pastry. The combination of spices I got from the few mexican dishes my grandma shared with me.

Steps:
- Combine refried beans, mashed sweet potatoes, shredded cheese if used, minced onion, and spices and mix well.
- Wearing plastic disposable gloves to protect yourself, make a lengthwise slit down each chile.
- Carefully stuff bean/sweet potato mixture evenly into chiles and reshape them.
- Place 1 sheet of phyllo on damp towel (keep rest covered or will be impossible to use).
- Spray phyllo with cooking spray.
- Top with another sheet of phyllo and spray with cooking spray again.
- Fold phyllo in half (short way or crosswise) and lightly coat with cooking spray again.
- Place one stuffed chile in the center of phyllo in parallel with short edge.
- Fold sides of phyllo over stuffed chile and roll up phyllo'jelly roll' style around chile.
- Place wrapped stuffed chile seam side down on ungreased baking sheet.
- Repeat wrapping procedure with all stuffed chiles.
- Spray tops of all wrapped chiles with cooking spray again before baking.
- Bake at 400 degrees fahrenheit for 15 to 20 minutes until phyllo is crisp and golden.
- Serve with your favorite salsa and sour cream or guacamole.

VEGETARIAN STUFFED CHILLI RELLENOS
Steps:
- Cut poblano chiles in half lengthwise to create a boat for filling and scrape out seeds. Heat 2 tablespoons olive oil in a nonstick skillet. Add onion, garlic, jalapenos, red bell pepper, cilantro and cumin, and cook over medium heat until golden brown for about 4 minutes. Remove pan from heat and stir in baked beans, hot sauce and 8 ounces of cheese. Add salt and pepper to taste. Spoon the mixture into the hollowed chiles and sprinkle with remaining cheese. Set up grill for indirect grilling and preheat to medium. Arrange the chillies on the grill away from the heat, or use the broiler. Cook until chillies are tender and cheese is browned and bubbling, about 30 to 40 minutes. Remove from grill and serve at once. Enjoy your vegetarian chilie rellenos!

- Charr the poblano peppers, sweat them and peel them -- watch our videofor a visual guide. Place the tomatoes, onion, garlic and chile from the tomato ingredients on top of a comal/griddle and charr until soft, please keep an eye on them as each vegetable will be ready at different times.
- Place all of the charred tomatoes, onion, garlic, and the rest of the salsa ingredients in a blender and blend until smooth. Set aside.
- After peeling and seeding the poblanos stuff them with the cheese and/or refried beans. If needed you can use toothpicks to hold them together.
- In a heavy skillet or cast iron skillet heat enough oil to fry your poblanos, amount will depend on the size of your pan and the peppers. While you wait for the oil to heat up, beat the egg whites until they reach soft peeks then fold in the egg yolks and give them a little whirl with the mixer.

- Charred Poblano Peppers: Place the whole poblano peppers on a baking sheet and place under the broiler to char, rotating every couple of minutes. About 3 to 6 minutes to char. Remove the charred peppers from the oven and place the peppers in a sealed container to steam (like a plastic bag or lidded bowl). Let peppers cool in the container. Once cool, remove the papery skin. Slice down one side and remove seeds.
- Lime crema: In a small condiment bowl, mix sour cream, lime zest, 1 clove minced/grated garlic, the juice from 1 lime wedge, and 1/2 teaspoon salt.
- Charred Tomatillo Salsa: Heat a large skillet over medium-high heat. Then add 1 tablespoon vegetable oil and halved tomatillos to skillet cut side down. Once the tomatillos are charred on the cut side, flip the tomatillos and char them on the other side. Remove the tomatillos from the pan and place them into a heat-safe bowl to cool (it can be dangerous to blend hot ingredients). Once cooled, blend with 1/2 teaspoon coarse salt until smooth.
