CHILI-TACO ZUCCHINI SOUP

I found a soup recipe in a Pampered Chef cookbook that had zucchini & yellow squash in it. So, wanted to list it, but I've decided to change some things, more to my liking. It is a vegetarian recipe. But, cooked meat can be added, at the end, as I mention below.

Chili-Taco Zucchini Soup image

Steps:

  • 1. In a 5 qt. or larger Dutch oven, combine 1st 6 ingredients. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Stir, occasionally.
  • 2. Add beans, zucchini, yellow squash, corn, and chilies, if using. Simmer, 10 minutes longer, add garlic powder & stir. Then, test veggies for tenderness. If they need more cooking, continue, until vegetables are tender. Add, salt, pepper, and/or hot sauce, to taste. Makes 10-12 servings. *If adding cooked chicken, add when adding last vegetables.

3-4 can(s) (14 1/2 oz. each) vegetable broth*
2 can(s) (14 1/2 oz. each) stewed tomatoes
2 can(s) (15 oz. each) tomato sauce
1 large onion, chopped
2 stalk(s) celery, chopped
1 pkg (1.25 oz.) mild taco seasoning mix or spicy, if that is your choice
1 can(s) (15 1/2 oz.) mild chili beans in sauce, undrained or more spicy ones, if you prefer
1/2-1 can(s) mild green chilies or spicy if preferred (optional) freeze any leftover chilies
1-2 medium zucchini, halved lengthwise & sliced
1 medium yellow squash, halved lengthwise & sliced
1 c fresh white corn, like silver queen or white frozen or canned corn; substitute yellow corn, if can't find white
1/4 tsp garlic powder
salt and pepper to taste (optional)
hot sauce to taste (optional)
TO MAKE NON-VEGETARIAN
2 c cooked chicken or turkey
*change broth to chicken or turkey broth, if preferred

This recipe is my husband's, and oh how I love for him to make it! It is sort of a combination of two recipes, plus his own ideas, that turned out great! Ernie's Kentucky Burgoo (done in a slow cooker) image

Steps:

  • 1. Place beef and pork in a 6 quart slow cooker. Sprinkle with onion salt, pepper, and red pepper. Toss, until evenly coated.
  • 2. Layer ingredients in slow cooker, on top of meat, in this order: carrots, onion, chicken, potatoes, green pepper, and stewed tomatoes with juice. Add chicken broth. Pour liquid from corn, into slow cooker; set corn aside. DO NOT STIR mixture in slow cooker.
  • 3. Cover, and cook on HIGH, for 3 hours, then, turn it down to LOW, for about 2 1/2 to 3 hrs., until beef, pork, and vegetables are tender. Be sure to check for doneness, when turning it to LOW, so you have an idea of its doneness. Check again periodically, so as not to overcook.
  • 4. When chicken seems done, remove chicken to a plate to cool, and stir in corn, lima beans, and okra, into mixture in slow cooker. Cook on HIGH for 30 minutes, or until heated through. Stir in V-8 juice, chili powder & garlic powder.
  • 5. Meanwhile, when chicken is cool enough to handle, remove chicken from bones, and cut into bite size pieces. Discard bones. Return chicken to mixture and heat through. Taste for adjusting seasoning. Add as needed. Makes 10-12 servings. Serve with garlic bread or cornbread.
  • 6. If you need more liquid later on, add more V-8 Juice, chicken broth, beef broth, or bouillon mixed in hot water or a combination of all or some & a little chili powder, onion powder & garlic powder.

1 lb lean beef stew meat, in 1 inch pieces
1 lb lean pork stew meat, in 1 inch pieces
4 chicken thighs, skinned
1 tsp onion salt or onion powder and salt
3 carrots, peeled and sliced
2 small onions, chopped
2 small red or regular potatoes, peeled and cubed
1 can(s) (14 1/2 oz) stewed tomatoes--any style, cut up and juice reserved
1 can(s) (17 oz) whole kernel corn and juice reserved
1/2 pkg (10 oz) frozen okra (fresh, if available) - optional
1/2 tsp black pepper
1/4 tsp or less, ground red pepper or a few drops of hot sauce (optional)
1 c green pepper, chopped
1 can(s) (10 3/4 oz) double strength chicken broth or 2 cans regular strength (i use more)
1 can(s) (17 oz) baby lima beans, drained
1 can(s) (4 oz) v-8 juice
1-2 tsp chili powder
1 tsp garlic powder

BACON CHEDDAR CHIVE MUFFINS

Perfect, for breakfast, with a bowl of potato soup or as a snack.

Bacon Cheddar Chive Muffins image

Steps:

  • 1. Fry, bake, or microwave bacon, until evenly brown. Drain, crumble, and set aside. Preheat oven to 400°F. Lightly grease muffin pan.
  • 2. In a large mixing bowl, combine first 9 ingredients (including bacon).
  • 3. In another bowl, combine last 4 items. Mix the wet mixture, into dry ingredients, and stir, until just moistened.
  • 4. Spoon batter into prepared muffin pan, and bake 20 minutes, or until tests clean, with a toothpick. Makes 12 muffins.

6 slice thick cut bacon
2 c all-purpose flour or unbleached all-purpose flour
1 Tbsp white sugar
2 tsp baking powder
1/4 tsp salt
1 1/4 tsp garlic powder
4 tsp dried chives
1/3 c grated parmesan cheese
1 c shredded 2% mild cheddar cheese
1 large egg, beaten
1/2 c 1% or 2% milk
1/2 c light sour cream
1/3 c vegetable oil

Veggiewiches With Avocado Spread image

Steps:

  • Peel the avocado and discard seed. In a food processor blend avocado and cream cheese until creamy.
  • Spread a few tablespoons of mixture onto 5 slices of bread. top with two slices of bacon, sprouts, tomato slice, and banana peppers.
  • Repeat for remaining sandwiches.
